BABETTE FRIEDMAN'S APPLE CAKE

Found this in The New York Times who notes it was adapted from Daniel Rose. Their picture was so appealing with the concentric circles of roasted apple slices on top I had to save the recipe. Sounds like it would be delicious with a fresh dark cup of coffee. Bet it will make the house smell so good!

8 ounces unsalted butter, more for greasing pan (2 sticks)
1 1/3 cups sugar (plus 1 tablespoon)
1/8 teaspoon salt
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
4 apples, peeled, cored and each cut into 8 slices (Gala good )
1/2 teaspoon apple brandy (Calvados )
1 teaspoon ginger, freshly grated
1/2 teaspoon ground cinnamon

Steps:

Number Of Ingredients 15

CAKE
3 Fuji or Gala apples (1 1/2 pounds)-peeled, cored and sliced 1/2 inch thick
1 tablespoon Calvados
1 teaspoon finely grated peeled fresh ginger
1/2 teaspoon ground cinnamon
2 1/4 cups plus 2 tablespoons sugar
3 sticks unsalted butter, at room temperature, plus more for brushing
1/4 teaspoon kosher salt
3 large eggs
3 cups all-purpose flour
1 tablespoon baking powder
GLAZE
1/4 cup sugar
2 tablespoons heavy cream
2 tablespoons unsalted butter

Steps:

  • 1. Make the cake In a large bowl, toss the apples with the Calvados, ginger, cinnamon and 2 tablespoons of the sugar. Let stand for 30 minutes. 2. Preheat the oven to 350°. Brush a 9-inch springform pan with butter. 3. In a large bowl, using a hand mixer, beat the 3 sticks of butter with the remaining 2 1/4 cups of sugar and the salt until pale yellow and fluffy, about 3 minutes. Beat in the eggs one at a time until smooth. Using a wooden spoon, stir in the flour and baking powder until a thick, smooth batter forms. Fold in 8 of the apple slices. Spread the batter in the prepared pan. 4. Arrange the remaining apples in slightly overlapping concentric circles on the batter and drizzle on the apple juices. Bake for about 1 hour and 40 minutes, until a cake tester inserted in the center comes out clean. 5. Meanwhile, make the glaze In a small saucepan, combine the sugar with 2 tablespoons of water and bring to a simmer without stirring. Cook over moderate heat, swirling the pan, until an amber caramel forms, about 4 minutes. Carefully add the cream and butter (the mixture will sputter) and cook, whisking, until the caramel is smooth, about 2 minutes. 6. Transfer the cake to a rack and let stand for 10 minutes. Unmold the cake and brush the top with the glaze. Let cool slightly and serve warm or at room temperature. MAKE AHEAD The cake can be stored in an airtight container at room temperature for 2 days.

WHITE HOUSE APPLE CAKE

Time 1h

Yield One 10-inch cake

Number Of Ingredients 13

3/4 cup canola or safflower oil
1/2 cup light brown sugar (tightly packed)
1/2 cup honey
2 eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup peeled grated apples, like Granny Smith
1 large orange, optional
1/4 cup amber maple syrup
1/3 cup confectioner's sugar

Steps:

  • Make the cake: Heat the oven to 350 degrees. Grease a 10-inch cake pan and place a silicone sheet or parchment paper on the bottom. (You can substitute a 10-inch spring-form pan, as long as it is tightly sealed at the bottom.)
  • With a handheld or electric mixer, combine the oil, brown sugar, honey, eggs and vanilla in a large bowl.
  • In a separate bowl, sift the flour, baking soda, salt and cinnamon. Add half the sifted dry ingredients to the liquid mixture, and mix on a low speed until combined.
  • Add the grated apples and the remainder of the dry ingredients. Finish mixing by hand, and pour into the greased cake mold. Bake for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  • Make the maple glaze: Stir maple syrup and confectioner's sugar over low heat in a small saucepan until combined. Then increase the heat and boil for 30 seconds. Set aside on the stove top, off the heat.
  • To finish the cake, run a paring knife around the edge of the cake pan. Invert a serving dish on top of the cake and then flip the cake over onto the dish, carefully lifting away the cake pan. Re-warm the maple glaze, stir it and pour it over the warm cake. You may decorate the platter with peeled orange sections. The cake will stay moist overnight if covered with foil. It does not need to be refrigerated.

Tips:

  • Use fresh, ripe apples: This will ensure that your cake is moist and flavorful.
  • Peel and core your apples before slicing them: This will help to prevent the cake from becoming too soggy.
  • Toss the apples with sugar and cinnamon before adding them to the batter: This will help to caramelize the apples and give them a delicious flavor.
  • Use a combination of all-purpose flour and cake flour: This will give the cake a light and fluffy texture.
  • Don't overmix the batter: Overmixing can result in a tough cake.
  • Bake the cake until a toothpick inserted into the center comes out clean: This will ensure that the cake is cooked through.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.
  • Serve the cake with a dollop of whipped cream or a scoop of vanilla ice cream: This will make the cake even more delicious!

Conclusion:

Babette Friedman's apple cake is a classic dessert that is perfect for any occasion. It is easy to make and always a hit with everyone who tries it. The combination of apples, cinnamon, and sugar is simply irresistible. You can make this cake with a variety of apples, such as Granny Smith, Honeycrisp, or Pink Lady.
