SARAH LEE'S SUGAR FREE PEACH COBBLER

My mother-in-law's name was Sarah Lee Smith. I used to tease her when she cooked something extra scrumptious, by calling the dish Sarah Lee's or Mrs. Smith's this or that. I learned a lot of my cooking skills from her, here's another one.

SUGAR FREE FRESH PEACH COBBLER

Sugar Free Fresh Peach Cobbler image

I was trying to "calorie and sugar" down an old favorite and this is the result! Let me just add that hubby and I put a big dent in this dish tonight! Enjoy! Notes: You can substitute fresh/frozen/canned peaches, cherries, blueberries, pineapples, apples, etc. The list and combinations are endless. You can also substitute margarine as my mother always did too.

Time 40m

Yield 1 cobbler, 6-8 serving(s)

Number Of Ingredients 6

9 peaches, diced, not peeled
8 ounces fresh blueberries
1 cup whole wheat pastry flour
1 cup sugar substitute (Splenda)
1/2-1 cup butter, cut into 1 tablespoon sections (1 or 2 sticks.)
1/2 teaspoon cinnamon (optional)

Steps:

  • - Put fruit in bottom of 9x13-inch pan.
  • -Mix together flour, Splenda, and butter until it resembles a course meal (cut in with pastry knife or fork).
  • -Sprinkle on top of fruit. Because whole wheat pastry flour can be grainier than all purpose, I melted 1/2 stick of butter and poured over topping for added moisture.
  • -Bake at 350°F for 30 minutes, or as your oven allows.
  • Enjoy!

PEACH COBBLER

Time 1h5m

Yield 8 to 10 servings

Number Of Ingredients 10

4 cups sliced peeled fresh peaches (4 to 5 peaches)
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 cup milk
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon cornstarch
1/2 cup boiling water
Serving suggestions: vanilla ice cream or whipped cream, optional

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the peaches in a 9-by-9-inch baking pan. In a medium bowl, mix together the flour, 3/4 cup of the sugar, the baking powder and 1/2 teaspoon of the salt. Add the milk and melted butter and mix well. Pour the batter evenly over the peaches.
  • In a small bowl, mix together the remaining 1/4 cup sugar, the cornstarch and remaining 1/2 teaspoon salt. Sprinkle the mixture over the batter. Evenly pour the boiling water all over.
  • Bake until golden brown and bubbling, 50 minutes. Serve in individual dessert dishes with vanilla ice cream or whipped cream, if desired.

Tips:

  • Use a variety of peaches. This will give your cobbler a more complex flavor. If you can, use a mix of ripe and slightly underripe peaches. The ripe peaches will add sweetness, while the underripe peaches will add a bit of tartness.
  • Don't overcook the peaches. You want them to be soft, but not mushy. Cook them just until they start to release their juices.
  • Make sure the biscuit topping is cooked all the way through. You don't want it to be doughy in the middle.
  • Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream. This will take your dessert to the next level.

Conclusion:

This sugar-free peach cobbler is a delicious and easy-to-make dessert that's perfect for any occasion. It's a great way to use up fresh peaches, and it's also a healthier alternative to traditional cobbler recipes. So next time you're looking for a sweet treat, give this recipe a try.
