Sweet Potato Casserole image

Sweet potato casserole is a delicious side dish for Thanksgiving or Christmas. This easy recipe is sweet and savory. Many sweet potato casseroles have a marshmallow topping, but not this one. Brown sugar, butter, and pecans are combined for the perfect topping. It caramelizes while baking and really makes the dish.

Number Of Ingredients 13

3 c mashed cooked sweet potatoes with skins removed
1 stick butter, melted
1 can(s) evaporated milk (13 oz.)
1 1/4 c sugar
2 eggs
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp vanilla extract
TOPPING:
2 Tbsp butter, melted
1/4 c all-purpose flour
1/2 c brown sugar
1/2 c pecans, in pieces

Steps:

  • 1. Pudding: Blend/mix potatoes, melted butter, milk, sugar, eggs, spices, and flavoring.
  • 2. Grease a 2 quart baking dish and pour sweet potatoes into the baking dish.
  • 3. Prepare the topping. In a small pan, melt 2 tablespoons of butter over low heat.
  • 4. Add brown sugar, nuts, and flour to butter mixture. Stir.
  • 5. Then add 2 tablespoons of water.
  • 6. Spread topping on top of the sweet potato mixture.
  • 7. Bake at 350 degrees for 30 minutes.
