Tips:

  • Selecting the right pumpkin puree is crucial. Opt for 100% pure pumpkin puree, avoiding pumpkin pie filling, which contains added sugars and spices.
  • If you don't have cake flour, you can make your own by combining 1 cup all-purpose flour with 2 tablespoons cornstarch and sifting them together.
  • To achieve the perfect stiff peaks when whipping the egg whites, ensure your mixing bowl and whisk are completely clean and free of any grease or residue.
  • Gradually incorporate the pumpkin puree into the egg yolk mixture to prevent the eggs from curdling.
  • Folding the egg whites into the batter gently and gradually helps maintain the airiness of the mixture, resulting in a light and fluffy cake.
  • Baking the cake in a tube pan allows for even heat distribution and prevents the center from remaining uncooked.
  • For the ginger cream filling, use fresh ginger for the best flavor. Grate it finely to ensure it blends smoothly into the cream.
  • Chill the ginger cream filling before using it to allow the flavors to meld and intensify.
