Time 35m

Yield 10 muffins, 10 serving(s)

Number Of Ingredients 11

1 cup flour
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 dash salt
1 egg
1/2 cup milk
2 tablespoons butter or 2 tablespoons margarine, melted
2 kiwi fruits, peeled and chopped
1/2 cup raisins

Steps:

  • Combine the dry ingredients.
  • In another bowl, beat the egg, milk, and butter. Stir into dry ingredients until just moistened. Fold in kiwi and raisins.
  • Fill paper lined muffin tins 3/4 full. Bake at 425 degrees for 15-19 minutes or until a toothpick comes out clean from the middle.
  • Cool 5 minutes before removing from the pan to a wire rack.

Tips:

  • Choose ripe kiwifruits: The riper the kiwifruits, the sweeter and more flavourful your muffins will be. Look for kiwifruits that are slightly soft to the touch and have a vibrant green colour.
  • Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix the batter just until the ingredients are combined.
  • Use muffin liners: Muffin liners make it easy to remove the muffins from the pan and also help to prevent them from sticking.
  • Fill the muffin cups evenly: Fill each muffin cup about 2/3 full to prevent the muffins from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This is the best way to ensure that the muffins are cooked through.

Conclusion:

These kiwifruit muffins are a delicious and healthy snack or breakfast treat. They are easy to make and can be enjoyed by people of all ages. With their bright green colour and tangy flavour, kiwifruit muffins are sure to be a hit at your next gathering.
