1 tablespoon baking powder
1 teaspoon salt

2 cups milk
2 large eggs
1/4 cup vegetable oil, plus more for skillet

Steps:

  • In a food processor, combine flour, sugar, baking powder, salt, cinnamon, and 1 cup oats and pulse a few times to coarsely grind oats. In a large bowl, whisk together milk, eggs, and oil. Add dry ingredients and 1 cup oats and whisk just until moistened.

3/4 cup whole wheat flour
3/4 cup quick-cooking oats
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup lowfat (1-percent) milk
3 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon canola oil

Steps:

  • Bring the cider to a boil in a small saucepan over high heat; lower the heat and simmer until reduced by half, 15 to 18 minutes. Stir in the honey and apples, reduce the heat to low and simmer until thick enough to coat the back of a spoon, about 30 minutes.

1/2 cup old-fashioned oats
5 tablespoons butter, diced, plus more for frying
1 1/3 cups all purpose flour
1 cup (packed) golden brown sugar
2/3 cup toasted wheat germ
2 large eggs
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/4 teaspoon (generous) salt
1/4 teaspoon (scant) ground nutmeg
1 1/2 cups diced fruit (such as pears, apples, or bananas; optional)
