3 lbs bone-in country-style pork ribs
1/4 cup reduced sodium soy sauce
1/3 cup orange marmalade or 1/3 cup apricot preserves
1/8 teaspoon red pepper flakes or 2 -3 dashes cayenne pepper
3 tablespoons ketchup
2 garlic cloves (minced)
1 -2 teaspoon fresh gingerroot (minced) (optional)

Steps:

  • For added flavor and richer color, If time permits, brown ribs in a medium-hot pan in about 1 1/2 tablespoons oil before crocking!
  • In a small bowl, combine the soy sauce, marmalade, red pepper flakes, ketchup garlic, and minced ginger. Pour half into a 5-qt. slow cooker. Top with ribs; drizzle with remaining sauce.

1/2 cup water
1 tablespoon liquid smoke, optional
1/2 teaspoon onion powder
1/2 cup chili sauce
1/4 cup hoisin sauce

  • Cut ribs into serving-size pieces; place in a 3-qt. microwave-safe dish with water, liquid smoke if desired and onion powder. Cover and microwave on high for 15-20 minutes or until meat is tender., Meanwhile, in a small saucepan, combine the remaining ingredients. Bring to a boil. I like to serve this with corn on the cob, an herb or pilaf rice, roasted potatoes, or a salad.

1 rack pork baby back ribs
4 tablespoons reduced-sodium soy sauce
3 tablespoons white wine
1 tablespoon sesame oil
4 cloves crushed garlic
1 ½ teaspoons minced fresh ginger root

3 tablespoons hoisin sauce (such as Lee Kum Kee)

  • Peel membrane off the bone side of ribs, if desired. Poke meat all over with a fork; place ribs in a resealable plastic zip-top bag.

1 rack pork back ribs
1/2 teaspoon Chinese five spice powder
1/2 teaspoon garlic powder
1 teaspoon hot mustard powder (you can use regular dry mustard)
1 teaspoon kosher salt
1/2 teaspoon black pepper
low sodium soy sauce
2 tablespoons granulated sugar
1 1/2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1/4 teaspoon Chinese five spice powder
1/2 teaspoon sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon black pepper
1 garlic clove, finely minced
2 tablespoons ketchup
3 tablespoons honey
1 teaspoon sriracha sauce

Steps:

  • In a small bowl, mix together all the ingredients for the rub. Rinse the ribs and pat dry. Rub the rub mixture all over the ribs, wrap in plastic wrap, and place in the refrigerator for 6 to 8 hours or over night.
  • To make the sauce: In a small saucepan over medium heat, add all the ingredients and mix until well combined. Bring to a boil, stirring occasionally. Once sauce comes to a boil, reduce heat and simmer for 15 minutes. Remove from heat and allow to cool.
  • When you are ready to grill - preheat your grill to 375 degrees. Wrap the ribs in aluminum foil and grill over indirect heat for 1 hour. Carefully remove the ribs from the foil and place directly over the heat. Allow to grill for another 15-20 minutes, basting periodically with the sauce. Remove and allow to rest for at least 5 minutes before cutting into.

6 cloves garlic, minced
1/2 cup Bonne Maman plum jam
1/2 cup soy sauce
3 Tablespoons rice vinegar
2 Tablespoons hoisin sauce

Steps:

  • Prepare the marinade: in a large bowl, combine the minced garlic, plum jam, soy sauce, rice vinegar, and hoisin sauce. Whisky until smooth. Place the ribs in a gallon-size freezer bag and pour the marinade over the ribs. Close the bag and shake so that all the ribs get covered with marinade. Place the freezer bag in the fridge for at least 2 hours, or ideally overnight. Preheat the oven to 350 degrees F. Line baking sheets with tin foil or parchment paper. The tangcu paigu we had that night (and on many subsequent occasions) were incredible. I don't know the Baiyun secret, but now that Baiyun is gone, I'm making my peace with this tasty version, developed with the help of Bruce Cost's "Asian Ingredients" and "Pei Mei's Chinese Cookbook".

1 1/4 lbs pork baby back ribs, cut into one-inch segments (get this done at the meat counter)
1/2 tablespoon shaoxing rice wine (optional)
5 tablespoons soy sauce
3 green onions, shredded (optional)
4 tablespoons sugar
3 tablespoons chinese black vinegar (or substitute balsamic vinegar)
2 teaspoons cornstarch, mixed with 3 T cold water (optional)
1 teaspoon sesame oil (optional)
peanut oil, for deep-frying

Steps:

  • Separate the ribs if the butcher hasn't already done so. They should be roughly bite-size.
  • Marinate ribs with wine and soy sauce for 30 minutes.
  • Remove ribs from marinade, reserving marinade for later.
  • Heat peanut oil (about 6 cups) in wok until it's almost smoking.
  • Deep fry ribs for 2 minutes, remove from oil with slotted spoon, reheat oil, and fry for another 1/2 minute until brown. (This is Pei Mei's method. Bruce Cost recommends deep-frying for 5-8 minutes.) Remove ribs from oil.
  • Pour oil out of wok into a heatproof bowl (stainless steel or glass). (Once it's cool, you can strain it into glass jar for next time).
  • To soy sauce marinade, add sugar, vinegar, corn starch mixture, sesame oil, and green onion to make sweet-sour sauce.
  • Heat one tablespoon of oil in the wok, pour in the sweet-sour sauce, and boil and stir until thickened.
  • Throw ribs into the wok with the sauce, and stir to coat thoroughly.
  • Serve on a platter, hot or at room temperature.
  • As the sole meat dish, this is enough for 2-3 people, but as part of a full meal with a variety of dishes, it serves up to 8 or 10.
