Time 1h5m

Yield 4

Number Of Ingredients 16

2 (1 1/4 pound) fully trimmed pork tenderloins, cut into 8 pieces
salt and freshly ground black pepper to taste
2 tablespoons all-purpose flour, or as needed
2 eggs, beaten
3 cups panko bread crumbs
2 tablespoons butter
⅓ cup diced dill pickles
1 jalapeno pepper, seeded and minced
1 bunch green onions, chopped, green tops reserved
1 pinch cayenne pepper, or to taste
1 ½ tablespoons all-purpose flour
1 ½ cups cold milk, or more as needed
1 teaspoon Worcestershire sauce, or to taste
¼ teaspoon freshly ground black pepper, or more to taste
½ cup vegetable oil for frying
salt to taste

Steps:

  • Place pork between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound pork with the smooth side of a meat mallet to a thickness of 1/2 inch.
  • Place pork pieces on a plate and season both sides generously with salt and black pepper. Sprinkle 2 tablespoons of flour over pork pieces, lightly coating both sides. Pour eggs over pork, turning to coat.
  • Transfer pork pieces to a bowl filled with panko bread crumbs. Press bread crumbs firmly into the meat on both sides. Transfer breaded cutlets to a clean plate, cover with plastic and refrigerate for 15 minutes.
  • Melt butter in a skillet over medium heat. Stir in pickles, jalapeno pepper, and green onions; cook and stir until onions have softened, about 3 minutes.
  • Sprinkle in 1 1/2 tablespoon flour. Cook and stir for 3 minutes.
  • Slowly stir in 2 to 3 tablespoons cold milk, whisking constantly. Stir in remaining milk, Worcestershire sauce, and black pepper. Simmer on low for 5 minutes. Taste and adjust seasoning.
  • Heat half the vegetable oil in a large skillet over medium-high heat. Add 4 breaded pork cutlets and cook until pork is not longer pink inside, and the crust is well-browned, 4 to 5 minutes per side. Transfer to plate lined with paper towels. Sprinkle with salt. Repeat with remaining vegetable oil and pork cutlets.

Categories     Pork

Time 1h15m

Yield 4 oz Cutlets, 8 serving(s)

Number Of Ingredients 13

1 1/2 lbs pork cutlets
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon black pepper
1 1/2 teaspoons salt
1 1/2 cups Japanese-style bread crumbs
1/2 cup vegetable oil (for frying)
3 ounces margarine
4 ounces all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 quart milk

Steps:

  • Place cutlets between sheets of plastic wrap and pound thin.
  • Place in pan; cover with buttermilk and marinate 1 hour.
  • Combine flour, garlic salt, pepper, and salt in a bowl.
  • Dredge cutlets in flour; dip in buttermilk.
  • Place in a bowl of Japanese Bread crumbs and coat well.
  • Heat oil in skillet to 300 degrees Fahrenheit.
  • Place each cutlet in pan and fry 4 minutes each side, or until a light brown.
  • Take cutlets out of skillet and pat dry with paper towels.
  • Place in pan; cover with foil; and finish in a 350 degree Fahrenheit oven for 10 to 15 minutes.
  • For the Country Gravy:.
  • Melt margarine in a pot and add flour to make a roux.
  • Cook roux over a medium flame, stirring constantly with a wire whip, until a very light brown.
  • Set aside for 5 minutes.
  • Scald milk and slowly add roux until sauce thickens.
  • Season with salt and black pepper.
  • To kick it up a notch, fry a piece of bacon, crumble it and add to gravy.

Tips:

  • Choose the right cut of pork. For this recipe, a boneless pork chop or pork loin is best. Look for a cut that is about 1 inch thick and has a good amount of marbling.
  • Tenderize the pork. To make the pork more tender, you can use a meat mallet or a fork to pound it out. This will help to break down the fibers and make the pork more tender when it is cooked.
  • Season the pork. Before you bread the pork, season it with salt, pepper, and any other desired spices. This will help to give the pork flavor.
  • Use a good breading. The breading is what will give the pork its crispy exterior. For this recipe, a mixture of flour, bread crumbs, and Parmesan cheese is used. You can also add other spices or herbs to the breading, such as garlic powder, onion powder, or paprika.
  • Fry the pork. Fry the pork in a hot skillet with oil until it is golden brown on both sides and cooked through. Be sure to not overcrowd the skillet, or the pork will not cook evenly.
  • Make the country gravy. While the pork is frying, you can make the country gravy. To make the gravy, you will need butter, flour, milk, and seasonings. Simply whisk together the butter and flour in a saucepan until smooth. Then, gradually whisk in the milk until the gravy has reached the desired consistency. Season the gravy with salt, pepper, and any other desired spices.

Conclusion:

Breaded pork cutlet with country gravy is a delicious and easy-to-make dish that is perfect for a weeknight meal. By following the tips above, you can make sure that your pork cutlets are tender, juicy, and flavorful. The country gravy is the perfect complement to the pork cutlets, and it is sure to be a hit with your family and friends.
