CREAMY PAN-ROASTED SCALLOPS WITH FRESH TOMATOES

Creamy Pan-Roasted Scallops With Fresh Tomatoes image

In this homage to a classic dish at Grand Central Oyster Bar in New York, scallops are quickly poached in a creamy, piquant tomato sauce that's spiked with Worcestershire and celery seed. If you want to work a little ahead, you can make the sauce through Step 2, and leave it in the pan, covered for an hour or two. Reheat it before adding the scallops in Step 3. Then serve the scallops right away, with some bread or rice to soak up every last drop of the herby, savory sauce.

Time 40m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons unsalted butter
1/4 cup thinly sliced shallots or red onion
Pinch of celery seeds
Salt and black pepper
2 cups chopped fresh tomatoes
2/3 cup dry white vermouth, dry white wine or clam juice
4 teaspoons Worcestershire sauce
1 cup heavy cream
2 pounds sea scallops, patted dry
1/2 cup chopped fresh chives, plus more for garnish
1/2 cup chopped celery leaves or parsley leaves, or a combination, plus more for garnish

Steps:

  • Heat a large skillet over medium-high and add the butter, letting it melt. Add shallots, celery seeds and a pinch each salt and pepper, and cook until the shallots are tender and opaque, about 3 to 5 minutes. Stir in tomatoes. Bring to a simmer, stirring occasionally, and cook until jammy, 9 to 13 minutes.
  • Increase heat to medium-high and stir in vermouth. Cook until about a third of the liquid evaporates, about 5 minutes. Add Worcestershire and cream, and simmer, reducing heat if needed and stirring occasionally, until sauce thickens enough to coat a spoon, 5 to 7 minutes.
  • Season scallops with salt and pepper, and add to the pan. Cook, uncovered, until scallops are just cooked through and opaque, 3 to 6 minutes, depending on the size of the scallops. Stir in chives and celery leaves. Serve immediately, garnished with more chives and celery leaves.

SEA SCALLOPS WITH GARLIC AND TOMATOES

Sea Scallops With Garlic and Tomatoes image

Provided by Pierre Franey

Categories     dinner, easy, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 1/4 pounds fresh sea scallops, cut in half if large
1/4 cup milk
1/4 cup flour for dredging
Salt and freshly ground pepper to taste
2 tablespoons olive oil
2 teaspoons finely chopped garlic
2 cups diced fresh, ripe tomatoes, peeled and seeded
2 tablespoons red-wine vinegar
2 tablespoons vegetable oil
1/2 cup coarsely chopped basil leaves or parsley

Steps:

  • Place the scallops in a bowl, and add the milk. Stir to coat, and let stand briefly.
  • Place the flour in a flat dish. Add salt and pepper; blend well. Drain the scallops, and dredge them in the flour mixture. Place the flour-coated scallops in a large sieve. Shake to remove any excess flour. Scatter the scallops onto a sheet of foil or wax paper so that they do not touch, or they may stick together.
  • Heat the olive oil in a saucepan. Add the garlic, tomatoes, salt and pepper. Add the vinegar, and bring to a sizzle. Simmer for 2 minutes.
  • Heat the vegetable oil over high heat in a nonstick skillet large enough to hold the scallops in one layer. Add the scallops, and cook, stirring, until lightly browned, about 4 minutes. Spoon equal portions of the scallops onto warm plates, and pour some of the tomato sauce over each portion. Sprinkle each with an equal amount of chopped basil or parsley, and serve with noodles.

SEARED SCALLOPS WITH PAN SAUCE

Seared Scallops With Pan Sauce image

Seven ingredients and one skillet lead the way to home cooking that's as good as anything you'll eat in restaurants.

Provided by Mark Bittman

Categories     Seafood     Shellfish     Scallop     Butter     Quick & Easy     Dinner     Chive     White Wine

Yield Serves 4

Number Of Ingredients 8

3 tablespoons butter
1 tablespoon olive oil
1 1/2 pounds sea scallops
Salt and freshly ground pepper
1 tablespoon minced garlic
Juice of 1 lemon
1/2 cup dry white wine or water, or more as needed
2 tablespoons chopped fresh chives

Steps:

  • Cut 2 tablespoons of the butter into pea-sized pieces, put it on a small plate, and stick it in the freezer. Heat a large skillet over medium-heat high for 3 or 4 minutes. Add the remaining 1 tablespoon butter and the olive oil and wait for the butter to melt.
  • Pat the scallops dry with paper towels, add them to the pan and sprinkle with salt and pepper; work in batches if necessary to avoid crowding the skillet. Cook, turning once, until they are well browned on both sides but not quite cooked through, 2 minutes per side (less if the scallops are under 1 inch across; more if they're over). Transfer the scallops to a plate.
  • Stir in the garlic, lemon juice, and wine and scrape all the brown bits off the bottom of the skillet with a spatula. Lower the heat to medium and cook until the liquid in the skillet thickens, a minute or two, then whisk in the butter you chilled in the freezer, one bit at a time, to make a creamy sauce, adding another tablespoon or two of liquid if necessary.
  • Return the scallops to the skillet and add the chives. Adjust the heat so the sauce bubbles gently and toss to coat the scallops with the sauce. To serve, transfer the scallops to a platter and spoon the sauce over all.
  • Variation:
  • Seared Scallops With Cherry Tomatoes and Basil: Skip the lemon juice. Cut 1 pint cherry tomatoes in half. Add the tomatoes with the garlic and wine and cook until they wrinkle a bit and release their juice, 2 or 3 minutes. Use chopped fresh basil leaves instead of chives.
  • Cooks' Notes
  • Releasing From The Pan: The scallops will offer no resistance when they're ready to turn. Press down gently while the scallops cook to encourage full contact with the pan, then listen for a hiss: That's moisture heating and evaporating.
  • Getting A Good Sear: The idea is to brown the scallops well on both sides without overcooking them, so keep the heat as high as you can without creating too much smoke.
  • Building Sauce With Butter: After you add the liquid and deglaze the pan, the addition of butter develops fantastic creaminess and richness.
  • Finishing The Dish: As soon as the scallops are cooked through completely and coated with the sauce, remove the pan from the heat; they will continue to cook. Nick-and-peek into one if you need to check for doneness.

BEEF SCALLOPS WITH FRESH TOMATO SAUCE

Provided by Kitchen Crew

Categories     Seafood

Number Of Ingredients 7

2 beef top round steaks, 1 pound each, cut into 1/4 inch thick
5 tomatoes
1/4 c salad oil
1 Tbsp sugar
1.5 tsp salt
1 tsp basil
1 Tbsp cornstarch

Steps:

  • 1. About 45 minutes before serving: On cutting board with meat mallet or dull edge of French knife, pound each beef top round steak to 1/8-inch thickness.
  • 2. Cut steaks into about 6 x 3-inch pieces.
  • 3. In 3-quart saucepan over high heat, heat 3-inches water to boiling; add tomatoes.
  • 4. Cook 30 seconds.
  • 5. With slotted spoon, remove tomatoes to large bowl of cold water; remove from water and slip off skins.
  • 6. Cut out stem end.
  • 7. Chop 3 tomatoes; slice remaining 2 tomatoes.
  • 8. Set aside.
  • 9. In 12-inch skillet over medium-high heat in hot salad oil cook steak, a few pieces at a time, until browned on both sides with pancake turner, removing pieces to warm platter as they brown.
  • 10. Keep steaks warm.
  • 11. Reduce heat to medium.
  • 12. To same skillet add chopped tomatoes, green onions, sugar, salt and basil.
  • 13. In cup with spoon, mix cornstarch and 1/2 cup water until smooth; gradually stir cornstarch mixture into tomato mixture and cook, stirring constantly until mixture thickens and boils; cook 1 minute.
  • 14. Add sliced tomatoes; heat through.
  • 15. Gently spoon tomato mixture over and around steaks.
  • 16. Makes 8 servings

Tips:

  • For the best results, choose high-quality beef tenderloin or sirloin steak.
  • Make sure to slice the beef against the grain, so it's tender and easy to chew.
  • If you don't have a meat mallet, you can use a rolling pin to pound the beef slices.
  • Don't overcrowd the pan when searing the beef. Otherwise, the beef will steam instead of sear.
  • Cook the beef for just a few minutes per side, until it's browned but still slightly pink inside.
  • Use a ripe, juicy tomato for the sauce. This will give the sauce a rich, flavorful taste.
  • Add a pinch of sugar to the sauce to help balance out the acidity of the tomatoes.
  • Serve the beef scallops over pasta, rice, or mashed potatoes.

Conclusion:

Beef scallops with fresh tomato sauce is a quick and easy weeknight meal that's sure to please the whole family. The beef is tender and flavorful, the sauce is rich and tangy, and the whole dish comes together in just 30 minutes. So next time you're looking for a delicious and easy beef recipe, give beef scallops with fresh tomato sauce a try!
