1 (16 oz.) package frozen potato and cheddar pierogies
4 slices bacon, chopped
2 cloves garlic, minced
1 (8 oz.) package cream cheese, softened and cubed
1/2 cup chicken broth
Salt and pepper to taste
1 cup cheddar cheese
2-3 green onions, chopped
1/4 cup chopped seeded plum tomato (optional)

Steps:

  • Preheat oven to 400 degrees. Arrange the pierogies in a lightly greased, 9x9 inch baking dish.
  • In a medium skillet, cook the bacon until crispy. Remove to a paper towel lined plate.
  • Add garlic to drippings in pan and cook for 30 seconds. Add cream cheese to pan and cook until cream cheese begins to melt, stirring frequently.
  • Gradually whisk in the chicken broth until smooth. Season sauce with salt and pepper to taste.

9 lasagna noodles, uncooked
4 C hot mashed potatoes
1/2 C (1/2 of a 250g tub) herb & garlic cream cheese spread
6 green onions, thinly sliced
1 pkg (80g) bacon pieces, divided
2 C shredded cheddar cheese, divided

Steps:

  • Heat oven to 375. Cook noodles as directed on package, omitting salt. Meanwhile, combine mashed potatoes, cream cheese spread, onions, 1/2 C bacon & 1 C cheddar cheese. Place 3 noodles in a 13 x 9 inch baking dish sprayed with cooking spray; cover with 1/3 of the potato mixture. Repeat layers twice. Top with remaining bacon & cheddar cheese; cover. Bake 30 mins, or until heated through. Uncover, bake 3-5 min or until cheddar cheese is lightly browned. Let stand 10 mins before cutting to serve.

½ pound bacon, finely chopped
3 large onions, diced
2 tablespoons butter
1 pound mushrooms, sliced
4 (1 pound) packages frozen potato and cheese filled pierogies
2 (10.75 ounce) cans condensed cream of mushroom soup
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray the bottom and sides of a lasagna-size casserole dish with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Transfer bacon to a paper towel-lined plate to drain. Cook and stir onion in hot bacon grease until golden, 5 to 10 minutes. Transfer onion to bacon and drain bacon grease from the skillet.
  • Melt butter in the same skillet over medium-high heat. Saute mushrooms in hot butter until golden and moisture evaporates, 5 to 10 minutes.
  • Cover the bottom of the prepared casserole dish with a single layer of frozen pierogies and spread 1 can condensed cream of mushroom soup on top. Layer bacon, onions, and mushrooms over the top. 5 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
½ cup milk
½ cup butter, melted
½ pound bacon, diced
1 onion, chopped
6 cloves garlic, minced
½ (16 ounce) package lasagna noodles
2 cups shredded Cheddar cheese
salt and pepper to taste
1 (8 ounce) container sour cream
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
