I love this recipe and would recommend to anyone who loves an elegant tilapia dish. It's easy and impressive. This recipe can be easily doubled for a dinner party. I like to serve with crusty Italian bread and sometimes I'll serve it with rice on the side, too.

4 garlic cloves, sliced
1/4 cup unsalted butter (I use smart balance)
1/4 cup white wine
1/2 cup chicken broth
2 lemons, juiced (more for plating)

salt and pepper

1 (398 ml) can navy beans (drained and rinsed)
1 tablespoon chopped fresh basil
1/2 teaspoon dried oregano
2 tablespoons olive oil, divided
1 tablespoon white wine vinegar
3 lbs spaghetti squash
1 bunch spinach
1 tablespoon butter
1/2 cup chopped onion
2 garlic cloves, chopped fine

  • Bring salted water to a boil. Cook pasta a minute or two less than package directions. Drain, reserving a couple cups of the pasta water and set aside. Meanwhile, heat chili oil in a large saucepan over medium-high heat. Once hot, add garlic and stir for a few minutes. Add spinach (do not squeeze water out of spinach, and don't worry about defrosting it 100%, most of the way is okay), vinegar, and spices (do yourself a favor and don't taste it at this point, the vinegar will taste too strong-it needs time to reduce and mellow).
