2 tablespoons oil
1 onion, finely chopped
1 bell pepper, finely chopped (red, green or yellow)
2 garlic cloves, minced
2 tomatoes, seeded and chopped
6 eggs, lightly beaten
salt and pepper (to taste)

Steps:

  • Heat the oil in a skillet over medium-high flame. Add the onion, bell pepper and garlic and saute for 3 to 4 minutes, or until the onion is softened and translucent.

2 Tbsp butter
1 Tbsp vegetable oil
1 medium tomato, chopped fine
1 green pepper, chopped fine (optional)
4 - 6 eggs
3 Tbsp cream
salt and pepper to taste
