½ cup diced celery

2 (15 ounce) cans creamed corn
1 (15 ounce) can whole kernel corn, drained
2 tablespoons shredded carrot
1 cup half-and-half cream
¾ cup skim milk
½ teaspoon ground nutmeg
¼ teaspoon ground black pepper
1 pinch salt

Steps:

2 tablespoons butter
1 large red onion, chopped

3 stalks celery, chopped
3 large carrots, chopped
2 jalapeno peppers, seeded and chopped
3 hot cherry peppers, seeded and chopped
2 poblano peppers, seeded and chopped

1 large sweet onion, pared into 8 chunks
4 scallions, sliced
2 garlic cloves, chopped
1/2 teaspoon smoked paprika
1/4 teaspoon crushed red pepper flakes
2 large red potatoes, cut into chunks
20 ounces frozen corn
4 cups vegetable broth
1 tablespoon liquid smoke
1 cup half-and-half
1/2 teaspoon kosher salt (to taste)
1/2 teaspoon black pepper (to taste)

Steps:

4 cups vegetable stock

salt & freshly ground black pepper

Steps:

  • Heat butter in large, heavy-based pan.
  • Add onions& cook over med-high heat for about 5 minutes, or until golden.
  • Add garlic& cumin seeds,& cook for one minute, stirring constantly.
  • Add stock& bring to a boil.
  • Add potatoes,& reduce heat to simmer 10 minutes.
  • Add all the corn,& parsley.
  • Bring to a boil, then reduce heat to simmer for 10 minutes more.
  • Stir in cheese, salt& pepper to taste,& heat gently, over a low heat, until cheese melts.
  • Serve with snipped chives.
  • You can make this recipe without the cheese, if you want less fat.
