Time 20m

Yield about 6 cups

Number Of Ingredients 6

1/2 cup plus 1 tablespoon whole milk, at room temperature
1 tablespoon plus 3/4 teaspoon vanilla extract, at room temperature
1 1/2 tablespoons freshly squeezed lemon juice, at room temperature
1/2 teaspoon finely grated lemon zest
1 1/2 pounds unsalted butter, at room temperature
4 1/2 cups confectioner's sugar

Steps:

  • In a small bowl, whisk together the milk, vanilla, lemon juice, and zest.
  • In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer and a bowl, combine the butter and sugar and mix on low until incorporated. Raise the speed to high and mix until light and fluffy, about 10 minutes. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.)
  • Reduce the speed of the mixer to low. Add the milk mixture in 3 batches, waiting for each batch to be fully incorporated before adding the next (scrape the bowl down occasionally). Raise the speed to high and mix briefly until fluffy. Use as desired. May be stored, covered, in the refrigerator for 3 days.

Provided by Food Network

Time 32m

Yield 24 cupcakes

Number Of Ingredients 17

2 cups granulated sugar
2 large eggs
1/2 cup unsalted butter, melted
2 teaspoons pure vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
4 apples, cored, peeled, and chopped (recommended: 2 Granny Smith and 2 Fuji)
Vanilla Bean Cream Cheese Frosting, recipe follows
Caramel syrup, for garnish
1 cup unsalted butter, room temperature
1 (8-ounce) bar cream cheese, room temperature
1 tablespoon vanilla bean paste
4 cups powdered sugar (about 2 pounds)
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F. Line 2 regular size cupcake pans with cupcake liners.
  • In a large bowl using an electric mixer on low speed, combine the sugar, eggs, butter, and vanilla extract until blended. In a separate large bowl, combine the flour, cinnamon, baking soda, baking powder, and salt. Add the flour mixture to the butter mixture, mixing on low until blended. Stir in the apples.
  • Fill the cupcake liners three-quarters full with batter and bake until the cupcakes spring back when touched with your finger, 15 to 20 minutes. Let cool in the pans for a few minutes, and then remove to a wire rack to cool completely.
  • Either pipe Vanilla Bean Cream Cheese Frosting onto the cupcakes using a pastry bag and your favorite tip, or spread each cupcake with the frosting. Drizzle each cupcake with caramel syrup.
  • In a large bowl using an electric mixer on low speed, beat the butter, cream cheese, and vanilla bean paste until smooth and thoroughly blended. Slowly add the powdered sugar and salt. Mix until smooth.

Tips:

  • Use fresh ingredients. Fresh cream cheese and butter will give your frosting a richer, more delicious flavor.
  • Make sure the cream cheese and butter are at room temperature. This will make them easier to mix and will help the frosting to be smooth.
  • Don't overbeat the frosting. Overbeating can cause the frosting to become curdled or grainy.
  • Add flavorings to taste. You can add vanilla extract, almond extract, or other flavorings to your frosting to taste.
  • Chill the frosting before using. This will help it to set and hold its shape.

Conclusion:

Vanilla bean and cream cheese frosting is a delicious, versatile frosting that can be used on a variety of desserts. It's easy to make and can be customized to your own taste. Whether you're a beginner baker or a seasoned pro, you'll love this frosting.
