For your Twix fix. The prep time is based on the microwave method of cooking the caramel. This is a 'cookie' recipe, not the exact clone of a Twix.

3/4 cup unsalted butter, room temperature
1/4 cup sugar
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/8 teaspoon salt
1 -14 ounce sweetened condensed milk
6 ounces semi-sweet chocolate chips (can sub milk chocolate)
1 teaspoon unsalted butter

Steps:

  • SHORTBREAD:.
  • Preheat oven 350 degrees. Grease with butter a 9x9" baking pan.
  • In bowl of electric mixer, cream the butter and sugar until light and fluffy. Beat in the vanilla extract. Add flour and salt and beat until the dough just comes together. Press onto the bottom of a greased pan. Bake about 20 minutes or until pale golden in color. Remove from oven and place on rack to cool.
  • CARAMEL FILLING:.
  • Pour the can of sweetened condensed milk into a heatproof bowl and place bowl over a saucepan of simmering water. Cover and cook, over low heat, stirring occasionally, for 60 to 90 minutes or until the milk has thickened and has turned a caramel color. Remove from heat and beat until smooth. Pour the caramel over the baked shortbread and leave to set.
  • (Microwave method: Place sweetened condensed milk in a large microwaveable bowl and cook on medium power for about 4 minutes, stirring halfway through baking time. Reduce the power to medium-low and continue to cook for another 8 - 12 minutes, or until the milk has thickened and turned a light caramel color. Remove from microwave and beat until smooth).
  • TOPPING:.
  • Melt chocolate and butter either in the microwave oven or in a heatproof bowl set over a saucepan of simmering water. Pour the melted chocolate evenly over the caramel and leave to set. Cut the shortbread in to pieces using a sharp knife.
  • Store cut bars in refrigerator to keep chocolate firm. Chilled chocolate doesn't cut clean.

Number Of Ingredients 8

1 (16 ounce) box keebler Club crackers
1/2 cup margarine
1/3 cup milk
1/2 cup sugar
3/4 cup brown sugar
1 cup crushed graham cracker
1 cup chocolate chips
3/4 cup crunchy peanut butter

Steps:

  • Line a 9 x 13 inch pan with Keebler Club Crackers.
  • Combine in saucepan margarine, milk and sugar. Boil about 5 minutes.
  • Add 1 cup crushed graham crackers to mixture. Stir.
  • Pour on top of Club crackers. Lay another layer of Club crackers on top of sugar mixture. Melt chocolate chips and crunchy peanut buttr together in double boiler or microwave, stirring often. Pour over top. Refrigerate.

These are tasty treats that don't last long at my house!

COOKIE BASE
1 3/4 c all purpose flour
1 c butter, cold
1/2 c brown sugar, firmly packed
CARAMEL FILLING
3/4 c butter
1/2 c brown sugar, firmly packed
3 Tbsp corn syrup, light
14 oz can(s) sweetened condensed milk
1 tsp vanilla extract
CHOCOLATE TOPPING
12 oz pkg milk chocolate chips
1 Tbsp butter

Steps:

  • 1. Preheat oven to 350. Place all the cookie base ingredients into a food processor and pulse until they start to mix together. It will not all blend together but will make small clumps when ready. Press into a 9 X 13" pan that has been sprayed with non-stick spray. Bake at 350 for 20 minutes or until lightly golden brown.
  • 2. While the crust is baking, make the caramel filling. Combine all the caramel ingredients except vanilla in a non-stick pan and heat over medium-high heat. Stir constantly until it comes to a boil. The butter will separate but later incorporate into the mix. Reduce heat and simmer for about 6-8 minutes while constantly stirring. Great arm workout! Remove from heat and add vanilla. Pour over the cookie crust and refrigerate until the caramel layer is cold and firm.
  • 3. Melt the chocolate chips and butter in microwave, or over double boiler, and spread over cooled caramel layer. I think I might try melting peanut butter chips or making a peanut butter sauce and spread over the caramel and top with chocolate next time! Or try a layer of white chocolate....
