2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water

1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. One 15-ounce can diced tomatoes
2 cups corn tortilla chips, broken into bite-size pieces
1 cup corn kernels, fresh or thawed frozen
2 cups shredded cooked turkey

the carcass of a turkey, broken into large pieces
1 carrot, sliced
2 ribs of celery
1 bay leaf
1 onion, quartered

4 cups coarsely chopped rinsed watercress

Steps:

  • In a large kettle combine the water, the turkey carcass, the carrot, the celery, the bay leaf, the onion, the thyme, the parsley, and the fennel seeds and simmer the mixture, uncovered, for 1 1/2 hours.
