8 chicken thighs, skinless and boneless (or substitute chicken breasts)
2 Tbsp butter
6 medium sweet potatoes (cooked, peeled, and quartered)
4 bananas, sliced
2 can(s) (11 oz each) mandarin oranges, drained
2 can(s) (8 oz each) crushed pineapple (pineapple chunks are ok too)
20 oz sweet and sour sauce
2/3 c chopped almonds (i used pecans...walnuts are ok too)

Steps:

  • 1. In large skillet, cook chicken in butter. I actually cut the chicken into lg. bite size pieces instead of keeping them whole. Either way works fine.
  • 2. In ungreased 9x13 baking dish, mix sweet potatoes, bananas, oranges and pineapple.
  • 3. top with chicken
  • 4. pour sweet and sour over the top
