1 1/2 c multi-grain penne pasta, uncooked

2 oz philadelphia neufchatel cheese, cubed
1 c shredded mozzarella cheese, divided
2 Tbsp grated parmesan cheese

Steps:

  • 1. Heat oven to 375 degrees F.
  • 2. Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.

Tips:

  • Use a variety of cheeses to create a rich and flavorful sauce. Try using a combination of hard, soft, and creamy cheeses.
  • Cook the chicken until it is cooked through but not dry. Overcooked chicken will become tough and chewy.
  • Don't overcook the pasta. Al dente pasta is the perfect texture for a pasta bake.
  • Use a flavorful sauce to coat the pasta. A simple tomato sauce or a creamy Alfredo sauce are both good options.
  • Top the pasta bake with a layer of cheese before baking. This will create a golden brown crust and help to hold the casserole together.
  • Bake the pasta bake at a high temperature for a short period of time. This will help to prevent the pasta from becoming dry.
  • Let the pasta bake cool for a few minutes before serving. This will help the flavors to meld and the casserole to set.
