GOAT CHEESE OMELET WITH MIXED HERBS, LYONNAISE POTATOES, GLAZED HAM AND TEXAS TOAST
Steps:
- In a 4-cup liquid measuring cup or large bowl with a spout, gently whisk the eggs with the heavy cream until blended. Whisk in the herbs.
- Heat an 8-inch nonstick skillet over medium-low heat. Add the butter to the pan and swirl to coat the bottom and sides. Stir the egg mixture again, then pour into the pan. Immediately start stirring with a rubber spatula and scraping around the edges of the pan without stopping. Add the salt. As soon as the eggs are just scrambled but still quite wet, spread the eggs in an even layer on the bottom of the pan. Add the cheese in a line down the eggs, perpendicular to the pan handle. Tilt the pan at a 45-degree angle to your serving plate and start nudging the edge of the egg closest to you to roll the top third of the egg over the filling in the center. Keep nudging to roll again into a three-fold omelet. The final roll should flip the omelet out of the pan and onto your plate.
- Mix the paprika, cayenne and 1 teaspoon salt together in a small bowl. Heat the oil in a large skillet over medium heat. Add the potatoes and a pinch of salt; cook, tossing about every 5 minutes, until evenly golden brown, about 15 minutes total. Add the onions and cook, stirring occasionally, until the onions are golden brown and tender, 5 to 7 minutes. Stir in the paprika mixture and season with salt and pepper to taste.
- Combine the maple syrup and apple cider vinegar in a small bowl. Preheat a flat top grill or cast-iron pan over medium-high heat and brush with oil. Sear the ham until golden, flipping halfway through, 2 minutes per side. Glaze the ham with the maple syrup mixture with a heatproof brush and cook 1 minute longer.
- Add the toast to the flat top and toast 1 to 2 minutes per side. Spread with butter and cut in half diagonally.

Steps:
- Seed and slice the hot and sweet fresh peppers and reserve.
- Cover potatoes with water and bring to a boil. Add salt to boiling water. Cook potatoes until tender, 10-12 minutes. Chop and brown bacon in a small skillet and add a tablespoon of chipotle powder and onions. Cook 5 minutes over medium heat until onions are tender. When potatoes are tender, drain and return to hot pot. Add bacon mixture and sour cream to the potatoes. Smash potatoes and season with salt, to taste.
- While potatoes are working, combine dry spice rub: chili powder, remaining chipotle powder, cumin and grill seasoning. Rub steaks liberally on both sides with the mixture. Heat a 12 to14-inch skillet screaming hot. Add 2 tablespoons of vegetable oil, 2 turns of the pan. It will smoke. Add steaks and do not turn for 6 minutes. Flip and cook another 6 minutes for medium rare, up to 10 minutes for well done. Remove skillet from flame and add bourbon. Return steaks to stove and flame the pan. When the fire goes out, transfer the meat to a large serving platter and pour pan juices over the top. Let meat rest for juices to redistribute. Return pan to heat and add remaining tablespoon vegetable oil to the skillet. Add hot and sweet peppers to the pan and saute them for 5 minutes. Season with salt and pile peppers alongside steaks.
- Remove meat from the T bones and cut into 4 portions. Top with some peppers and pile some chipotle smashers along side. Spoon drippings and juices over meat and serve.

TEXAS BAKED BAKED POTATOES
This is nothing what it sounds like so beware, if you are looking for regular baked potatoes this is not for you. This is a terrific and tasty appetizer and it looks great. These are great make ahead, read through first. Time includes baking the potatoes twice. If you desire once they are done you can cut each one in half again, do not do this before you fill and bake again, it's too hard because they are too small to work with.

Steps:
- Bake the potatoes in an oven at 350 degrees for an hour to an hour and a half until they are done.
- While that is baking mix the sour cream, cream cheese, bacon bits, and butter in a bowl until well combined and set aside.
- Cut them in fourths and scoop out most but not all of the filling in each one.
- Mix about half of the filling from the potatoes with the sour cream mix.
- Take the fourths of potatoes and refill them with the new mixture.
- If you want to put up over night this is where you would do it otherwise they will not hold up as well.
- Drizzle with the olive oil and bake again at 350°F for 15-20 minutes or until lightly golden. Serve warm.
- Once again, as this is important, if you desire once they are done you can cut each one in half again, do not do this before you fill and bake again, it's too hard because they are too small to work with.

Steps:
- 1. Preheat oven to 375.
- 2. Toss together all ingredients in large bowl.
- 3. Place on baking sheet.
- 4. Cook for 1 hour, turning frequently, or until lightly browned.
Tips:
- Choose the right potatoes: Yukon Gold potatoes are the best choice for this recipe, as they hold their shape well and have a creamy texture. You can also use Russet potatoes, but they may fall apart more easily.
- Cut the potatoes evenly: This will help them cook evenly. If the potatoes are different sizes, the smaller ones will cook faster than the larger ones.
- Soak the potatoes in water: This will help to remove excess starch and prevent the potatoes from sticking together.
- Use a well-seasoned cast iron skillet: This will help to create a crispy crust on the potatoes.
- Don't overcrowd the skillet: If you overcrowd the skillet, the potatoes will not cook evenly.
- Cook the potatoes over medium heat: This will help to prevent them from burning.
- Flip the potatoes halfway through cooking: This will help to ensure that they cook evenly on all sides.
- Season the potatoes with salt and pepper: You can also add other seasonings, such as garlic powder, onion powder, or paprika.
- Serve the potatoes hot: They are best when served immediately after cooking.
Conclusion:
Texas potatoes are a delicious and easy-to-make side dish. They are perfect for any occasion, from a casual weeknight meal to a special holiday dinner. With their crispy crust and fluffy interior, these potatoes are sure to be a hit with everyone at the table. So next time you're looking for a simple but flavorful side dish, give Texas potatoes a try.
