Sweet Banana-Carob Shake image

I invented this one morning when I was just dying to combine these ingredients... worked very well, I must say. It's best if you give it 1/2 hour or so in the freezer so it gets more like ice cream than a thick drink.

Number Of Ingredients 5

2 medium bananas, frozen
1 cup cold vanilla-flavored soymilk or 1 cup plain soymilk
1 tablespoon carob powder, sifted
4 soft dates (I used Parnoosh dates)
1/2 teaspoon vanilla extract, to taste

Steps:

  • If dates have been refrigerated, warm them a bit in the microwave, to make softer and easier to blend.
  • Slice the frozen bananas, this helps out your blender :-).
  • Combine all ingredients in a food processor or blender, and blend till very smooth (you'll have visible flecks of date skin but who cares).
  • Pour into 2 mugs and let them sit in the freezer for 20-60 minutes.
  • Enjoy your freezy treat!

1/3 cup almonds
1 1/4 cups water (or you can use almond milk, rice milk, etc.)
3 dates, pitted
2 tablespoons tahini
1 tablespoon flax seed oil (or grapeseed oil)
3 tablespoons carob powder
3 frozen bananas
1 pinch sea salt
honey (optional)

Steps:

  • Process the almonds, dates, and water in blender until smooth.
  • Add the rest of the ingredients and blend only until smooth(you still want it to be frosty like a shake).
  • If you have presoaked almonds on hand, you can replace the 1/3 cup dry almonds with about 1/2 cup presoaked almonds.
  • Variation:.
  • Pour into pop molds to make carob popsicles!

The scientific name of the carob tree is 'Ceratonia siliqua' derived from the Greek word 'keration' which means horn as the shape of the pod itself. In Cyprus, another common name is 'terratsi', a word that is probably derived from its Latin scientific name, Ceratonia. Carob is also referred to as St John's bread following the legend that St' John the Baptist was feeding on the pods of this tree while in the desert. I made this up when I wanted the taste of Carob in a cold drink that was also dairy free.

1 banana
1/2 cup light vanilla soymilk (I like VitaSoy)
2 tablespoons carob powder or 2 tablespoons carob chips
1 1/2 teaspoons peanut butter (or soy nut butter)
sugar or sugar substitute (About 1 Tbsp. or to taste-only needed if using carob powder)
6 -8 ice cubes
1 dash cinnamon

Steps:

  • If using carob chips, place the peanut butter and chips in the microwave-safe bowl and microwave on HIGH for about 7-10 seconds, or until the mixture is smooth and pourable.
  • Spoon into blender along with banana, soy milk, and ice cubes.
