Time 25m

Yield 4 1 1/4 cups each, 4 serving(s)

Number Of Ingredients 12

1 tablespoon extra-virgin olive oil
1 medium onion, halved and sliced
2 garlic cloves, minced
1 medium zucchini, halved lengthwise and sliced
1 medium summer squash, halved lengthwise and sliced
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 (15 -19 ounce) can cannellini beans (see Tip) or 1 (15 -19 ounce) can great northern beans, rinsed (see Tip)

Steps:

  • Heat oil in a large nonstick skillet over medium heat. Add onion and garlic and cook, stirring, until beginning to soften, about 3 minutes.

Or, if you have the time, cook your own beans from scratch.

SUMMER SQUASH SAUTÉ WITH TOMATO & BASIL

SUMMER SQUASH SAUTÉ WITH TOMATO & BASIL image

Categories     Vegetable     Side     Sauté

Yield 4 Servings

Number Of Ingredients 8

2 Medium Yellow Squash, cut into 1 in. X 1 in. pieces
2 Medium Zucchini Squash, cut into 1 in. X 1 in. pieces
1 Medium Yellow Onion, diced into 1 in. pieces
1 Green Bell Pepper, diced into 1 in. pieces
2-3 Tomatoes cut into 1 in. pieces
¼ Cup Fresh Chopped Basil
Salt, Black Pepper, & Granulated Garlic
Olive Oil

Steps:

  • After you have chopped all your ingredients, heat a large skillet with 1 Tablespoon of Olive Oil over medium to medium high flame. Before oil smokes, add onion and bell pepper pieces. Sauté for a minute, then add both squash. I like to cook this dish with kind of a high flame to caramelize the outside of the vegetables. If you don't feel comfortable doing this, cook at a lower temp. Be sure to flip or stir your vegetables, so that they don't burn. About half way through cooking the squash (about 5 min.), add the tomatoes. Then just about a minute before the squash is ready (about another 4 min.), stir in the fresh basil, and season with salt, pepper, & granulated garlic. Then enjoy!

SUMMER SQUASH SAUTé RECIPE - (4.4/5)

Summer Squash Sauté Recipe - (4.4/5) image

Provided by asally04

Number Of Ingredients 8

2 pounds summer squash and or zucchini, cut into matchsticks
1 teaspoon kosher salt plus more
1/4 cup almonds, sliced
2 tablespoons olive oil
2 garlic cloves, sliced
1/4 teaspoon crushed red pepper flakes
1/4 cup Parmesan, finely grated
Freshly ground black pepper

Steps:

  • Place squash in a colander set in the sink or over a large bowl and toss with 1 teaspoon salt. Let squash stand 10 minutes, then squeeze well to remove as much excess moisture as possible (do not rinse). Meanwhile, toast almonds in a large dry skillet over medium heat, tossing occasionally, until lightly browned, about 3 minutes. Transfer to a plate; let cool. Heat oil in same skillet over medium heat. Add garlic and red pepper flakes and cook, stirring often, until fragrant but not browned, about 2 minutes. Add squash and cook, tossing occasionally, until crisp-tender, about 5 minutes. Fold in Parmesan and season with salt and pepper. Fold in almonds. 1 dish, 4 ways - Switch up this squash sauté with different flavor combinations: Chile plus Lime: Cook 1 chopped jalapeño along with garlic and red pepper flakes. Omit almonds and cheese and finish squash with lime juice and toasted pepitas. Carrot plus Miso: Shred 1 large carrot and cook with the squash. Whisk 1 tablespoon white miso and 1 tablespoon rice vinegar; stir in miso mixture at the end instead of cheese. Cumin plus Coriander: Add 1/2 teaspoon each of ground cumin and ground coriander while sautéing the garlic and red pepper flakes. Serve with a dollop of plain Greek yogurt.

Tips:

  • Choose the right summer squash: Look for young, tender squash with smooth, unblemished skin. Avoid squash that is too large or has blemishes, as it may be tough and bitter.
  • Prepare the squash properly: Wash the squash thoroughly and cut it into evenly sized pieces. If the squash is large, you may need to peel it before cutting it.
  • Use a well-seasoned skillet: A well-seasoned skillet will help prevent the squash from sticking and will give it a nice, even brown color.
  • Don't overcrowd the skillet: When cooking the squash, don't overcrowd the skillet. Otherwise, the squash will steam instead of sautéing and will become mushy.
  • Cook the squash until it is tender: The squash should be cooked until it is tender but still has a slight crunch. Overcooking the squash will make it mushy.
  • Season the squash to taste: Once the squash is cooked, season it to taste with salt, pepper, and other desired seasonings.

Conclusion:

Summer squash is a delicious and versatile vegetable that can be used in a variety of dishes. Sautéed summer squash is a quick and easy side dish that can be served with grilled chicken, fish, or steak. It is also a great addition to salads, pasta dishes, and frittatas. With its mild flavor and tender texture, summer squash is a great way to add some extra vegetables to your diet.
