Tips:

  • Use a combination of natural sweeteners. This recipe uses a combination of stevia, erythritol, and monk fruit extract to achieve a natural sweetness without the use of refined sugar.
  • Don't overmix the batter. Overmixing the batter can result in a tough pie crust. Mix the ingredients just until they are combined.
  • Be patient when baking the pie. The pie needs to bake for at least 45 minutes, or until the filling is set and the crust is golden brown. Don't rush the process, or the pie will not be cooked properly.
