SUMMER STRAWBERRY SALAD
I was asked to take a salad to a backyard get-together and didn't want to just take the same old thing, so I came up with this recipe, which combines features of several different salads I've had in the past. Look for my recipes for balsamic vinaigrette and creamy orange soy dressings on this site. Both are excellent with this salad.

I stopped at a deli and ordered a meal that came with this salad. The salad was so different that I didn't even want to try it. I did try it and loved it! I created my own version at home. Everyone loves it! You can use spinach leaves entirely if you prefer, or mix in any kind of greens you like.

Steps:
- 1. For the salad, add your fresh greens to your salad bowl. You can make this as one big salad or individual ones. I roughly chop the strawberry's and add to the greens. Sprinkle with blue cheese.
- 2. For the candied walnuts, place the brown sugar in a sauté pan, slowly melt the sugar and add water. Once sugar melted add the walnuts (you can also use almonds) and sauté for a minute or so. Then remove from heat. Top your salad with these. FYI, if they sit they will harden.
- 3. For the strawberry vinaigrette, add all ingredients to the blender and blend until smooth. Pour desired amount over salad and toss.

STRAWBERRY SALAD WITH CHOCOLATE BALSAMIC DRESSING
A refreshingly different salad, we can buy Stilton with black pepper here, but you can use any Stilton or even leave it out if you prefer. I make half the amount of dressing as I find that this is enough. Recipe adapted from Rococo Real Chocolate Book by Chatal Coady.

Steps:
- Divide the rocket between the plates. Slice the cucumber lengthways, seed and slice into halfmoons. Arrange the Stilton, cucumber and strawberries on the rocket. Drizzle dressing on top.
- To make the dressing: Place balsamic vinegar in a saucepan, add caster sugar and dissolve over a gentle heat. Remove from heat and stir in 2 squares of chocolate. Leave to cool at room temperature. Do not refrigerate or dressing will solidify.
Tips:
- Select ripe, sweet strawberries: Perfectly ripe and flavorful strawberries are essential for creating a delicious salad. Look for plump, brightly-colored berries with no signs of bruising or damage.
- Use high-quality Stilton cheese: A good quality Stilton cheese will add a rich, creamy, and slightly tangy flavor to the salad. Look for a cheese that is well-aged and has a smooth, crumbly texture.
- Choose a crisp and refreshing salad mix: A mix of crisp greens, such as romaine lettuce, arugula, or spinach, will provide a nice contrast to the sweet strawberries and creamy Stilton cheese.
- Add some crunch: Nuts, such as walnuts or pecans, or crumbled bacon can add a nice crunchy texture to the salad. If using nuts, toast them lightly in a pan for enhanced flavor.
- Make a flavorful vinaigrette dressing: A simple vinaigrette dressing made with olive oil, balsamic vinegar, Dijon mustard, and a touch of honey will tie all the ingredients together. Adjust the proportions of the ingredients to suit your taste preferences.
- Chill the salad before serving: This will help the flavors to meld and the salad will be more refreshing when served chilled.
Conclusion:
The combination of sweet strawberries, creamy Stilton cheese, and a tangy vinaigrette dressing creates a delightful symphony of flavors in this summer salad. It's a perfect dish for a light lunch or as a side dish at a barbecue or picnic. With its vibrant colors and refreshing taste, this salad is sure to impress your friends and family. So, next time you're looking for a quick and easy summer salad that's bursting with flavor, give this Strawberry Stillton Summer Salad a try.
