Time 1h10m

Yield 4 servings

Number Of Ingredients 12

4 pounds mussels
2 tablespoons olive oil
1 shallot, minced
2 garlic cloves, shaved
4 sprigs fresh thyme
1/2 cup dry white wine
1 lemon, juiced
1 cup chicken broth, low-sodium
Pinch red pepper flakes
1 tomato, peeled, seeded and cut in large dice
1/2 cup roughly chopped parsley
2 tablespoons unsalted butter

Steps:

  • Rinse the mussels under cold running water while scrubbing with a vegetable brush. Discard any with broken shells. Heat oil in a 6 to 8-quart stockpot. Saute the shallot, garlic and thyme to create a base flavor. Add the mussels and give them a good toss. Add wine, lemon juice, chicken broth and red pepper flakes; cover the pot and steam over medium-high for 5 minutes until the mussels open. Toss in the tomato, parsley and butter, recover the pot, and steam for another minute to soften. The tomatoes should keep their shape. Serve with plenty of grilled garlic bread to sop up the broth.

Yield Makes 4 servings

Number Of Ingredients 17

Lemon aioli:
1 large egg yolk
1 garlic clove, finely grated
1 teaspoon (or more) fresh lemon juice
1/4 cup vegetable oil
1/4 cup extra-virgin olive oil
Kosher salt
Mussels:
2 tablespoons olive oil
1 medium yellow onion, chopped
Kosher salt, freshly ground pepper
2 garlic cloves, finely chopped
2 tablespoons tomato paste
1/2 cup white wine
4 pounds mussels, debearded, scrubbed
2 teaspoons fresh thyme leaves
Sliced country-style bread, toasted (for serving)

Steps:

  • For lemon aioli:
  • Whisk egg yolk, garlic, and lemon juice in a medium bowl. Whisking constantly, drizzle in vegetable oil, then olive oil in a slow, steady stream; whisk until aioli is emulsified. Season with salt and more lemon juice, if desired. Cover; chill.
  • DO AHEAD: Aioli can be made 1 day ahead. Keep chilled.
  • For mussels:
  • Heat oil in a large heavy pot over medium-high heat. Add onion, season with salt and pepper, and cook, stirring often, until softened, about 5 minutes. Add garlic and cook, stirring often, until fragrant, about 1 minute. Add tomato paste and cook, stirring, until it begins to darken, about 2 minutes. Add wine and bring to a boil. Reduce heat and simmer until liquid is slightly reduced, about 1 minute.
  • Add mussels and 1/2 cup water to pot, cover, and reduce heat to medium. Cook, stirring occasionally, until mussels open (discard any that do not open), 10-12 minutes.
  • Ladle mussels and broth into shallow bowls and top with thyme; serve with bread and lemon aioli.

STEAMED MUSSELS WITH LEEKS, THYME & BACON

Steamed mussels with leeks, thyme & bacon image

A bistro-style starter for two. Mop up the juices with crusty bread, or make it into a main with chunky chips

Provided by Barney Desmazery

Categories     Dinner

Time 35m

Number Of Ingredients 6

750g mussel
25g butter
6 rashers smoked streaky bacon , chopped into small pieces
2 small leeks , sliced on the diagonal
handful thyme sprigs
small glass cider or white wine

Steps:

  • Scrub and de-beard the mussels. Heat half the butter in a pan, then sizzle the bacon for 3-4 mins until starting to brown. Add the leeks and thyme, then sweat everything together for 4-5 mins until soft. Turn the heat up high, add the mussels and cider or wine, then cover and cook for 4-5 mins, shaking the pan occasionally, until the mussels have opened. Discard any that don't open. Scoop the mussels and the other bits into a dish, then place the pan back on the heat. Boil the juices for 1 min with the rest of the butter, then pour over the mussels and serve with crusty bread.

Tips:

  • Choose fresh mussels: Always choose mussels that have tightly closed shells. Avoid any mussels with open shells or cracked shells.
  • Properly clean the mussels: Clean the mussels under cold running water, using a brush to remove any dirt or debris. Remove the beards by pulling them out with your fingers.
  • Use a large pot or steamer: Choose a pot or steamer large enough to hold all of the mussels in a single layer. Overcrowding the mussels will prevent them from cooking evenly.
  • Add enough liquid: The liquid should come about halfway up the mussels. Use a combination of white wine, water, and vegetable stock for a flavorful broth.
  • Don't overcook the mussels: Mussels cook quickly, so don't overcook them or they will become tough. Cook the mussels for 5-7 minutes, or until the shells have opened.
  • Serve immediately: Mussels are best served immediately after cooking. Serve them with a crusty bread or baguette for dipping in the broth.

Conclusion:

Steamed mussels are a delicious and easy-to-make seafood dish. With a few simple ingredients, you can create a flavorful and elegant meal that is perfect for a special occasion or a casual weeknight dinner. So next time you're looking for a quick and delicious seafood recipe, give steamed mussels a try!
