STEAK LETTUCE SALAD

Steak Lettuce Salad image

The best salad I've ever eaten!! We got given some leftover ribeyes from a barbecue at my husband's company. I've seen recipes for steak salad many times before but never had the luxury of steaks to play with! Of course, I couldn't find any of the recipes that I'd been hoarding for just such a time so came up with my own dressing that suited the salad to a T. If you mix up the dressing and let it sit for at least a half an hour, it blends the flavours better and makes it that much tastier! We used sourdough croutons which were really good for this salad. The steak needs to be completely cooled so that it doesn't wilt the lettuce.

Time 15m

Yield 4 servings

Number Of Ingredients 15

1/2 head romaine lettuce, cut into bite-size pieces
1 large head Belgian endive, thinly sliced crosswise (about 1 1/2 cups)
1/2 red onion, thinly sliced into rings
3 cups fresh baby arugula
12 cherry tomatoes, halved
4 ounces Gorgonzola, coarsely crumbled
Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1 pound steak (such as New York, rib-eye or filet mignon), pan-fried or grilled and chilled
1/2 cup red wine vinegar
3 tablespoons lemon juice
2 teaspoons honey
2 teaspoons salt
Freshly ground black pepper
1 cup olive oil

Steps:

  • In a large bowl, combine the romaine lettuce, Belgian endive, red onion, baby arugula and cherry tomatoes, and half of the cheese. Toss the salad with enough vinaigrette to coat. Season the salad with salt and pepper, to taste. Arrange the salad on a platter.
  • Cut the steaks crosswise into thin slices. Arrange the steak slices atop the salad and sprinkle with the remaining cheese. Drizzle more vinaigrette over the steak slices and serve.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil.

Tips:

  • Select high-quality steak: Choose a well-marbled steak, such as ribeye, strip loin, or tenderloin, for the best flavor and tenderness.
  • Cook the steak to your desired doneness: Use a meat thermometer to ensure the steak is cooked to your liking. For a medium-rare steak, cook to an internal temperature of 135 degrees Fahrenheit.
  • Let the steak rest: Allow the steak to rest for a few minutes after cooking to allow the juices to redistribute, resulting in a more tender and flavorful steak.
  • Use a flavorful dressing: The dressing is a key component of this salad, so use a flavorful combination of ingredients. Try a simple vinaigrette made with olive oil, balsamic vinegar, Dijon mustard, and herbs, or a more complex dressing with ingredients like blue cheese, crumbled bacon, or avocado.
  • Add a variety of toppings: In addition to the steak and lettuce, consider adding other toppings to your salad such as cherry tomatoes, red onion, avocado, or crumbled cheese. These additional ingredients will add flavor, color, and texture to the salad.

Conclusion:

This steak and lettuce salad is a delicious and satisfying meal that is perfect for a weeknight dinner or a special occasion. The tender steak, flavorful dressing, and variety of toppings make this salad a surefire hit. With a few simple tips, you can create a restaurant-quality steak and lettuce salad at home. So next time you're looking for a quick and easy meal, give this steak and lettuce salad a try. You won't be disappointed!
