3/4 teaspoon vanilla extract
2 cups walnut halves
1/2 cup sugar
DRESSING:
1/4 cup canola oil
2 tablespoons cider vinegar
1 tablespoon sugar
1-1/2 teaspoons light corn syrup
1 teaspoon poppy seeds
1/4 teaspoon salt
1/4 teaspoon ground mustard
SALAD:
8 ounces fresh baby spinach (about 10 cups)
1-1/2 cups fresh raspberries

Steps:

  • Preheat oven to 300°. In a small bowl, whisk egg white and vanilla until frothy. Stir in walnuts. Sprinkle with sugar; toss to coat evenly. Spread in a single layer in a greased 15x10x1-in. baking pan., Bake 25-30 minutes or until lightly browned, stirring every 10 minutes. 1/4 cup water
1/2 teaspoon ground cinnamon
1/2 teaspoon chili powder
1/4 teaspoon curry powder
2 cups walnut halves
SALAD:
1 package (9 ounces) fresh baby spinach
2 cups sliced fresh strawberries (about 1 pound)
1 medium cucumber, halved and sliced
VINAIGRETTE:
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons seedless raspberry jam
1 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup grated Parmesan cheese

  • In a small heavy saucepan, combine the first 5 ingredients; stir gently to moisten all the sugar. Cook over medium-low heat, gently swirling pan occasionally, until sugar is dissolved. Cover; bring to a boil over medium heat. Cook 1 minute. Uncover pan; continue to boil and gently swirl pan until syrup turns a deep amber color, about 2-3 minutes. 1/2 cup fresh mushrooms, sliced
1/2 red onion, sliced thin

1/2 cup toasted walnuts, chopped
6 oz. baby spinach, rinsed and dried
1/2 cup dried cranberries
1/2 cup crumbled blue cheese or feta
2 tomatoes, chopped
1 avocado, peeled, pitted and diced
1/2 red onion, thinly sliced
2 Tbsp. red raspberry jam (with seeds)
2 Tbsp. red wine vinegar
1/4 cup walnut oil or extra virgin olive oil
