1 red bell pepper
½ green bell pepper
3 cups water
1 cup brown lentils
1 tablespoon olive oil
1 carrot, sliced
1 onion, chopped
1 broccoli floret, chopped
2 cups vegetable broth
1 tablespoon crushed red pepper flakes
1 tablespoon ground ginger
1 tablespoon ground black pepper
1 teaspoon dried thyme leaves
1 teaspoon dried rubbed sage

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Cut the peppers in half from top to bottom; remove the stem, seeds, and ribs, then place the peppers cut-side-down onto the prepared baking sheet.
  • Bake in the preheated oven until limp, 30 to 40 minutes. Turn the peppers over halfway through cooking. Once ready, place the peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Once cool, remove the skins and discard. Chop the peppers
  • Meanwhile, bring the water and lentils to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the lentils are tender, about 30 minutes. Drain, rinse, and set aside.

Pour in some of the vegetable broth, cover, and steam the vegetables until tender. Simmer until the flavors come together and the vegetables are very tender, about 20 to 30 minutes. Add water if needed to maintain your desired consistency. Stir in the cooked lentils until hot.

Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. 1 Spanish onion, cut into 1/2-inch dice
4 garlic cloves, minced
3 tablespoons minced fresh ginger (3-inch piece)
1 teaspoon ground cumin
1/2 teaspoon curry powder
2 plum tomatoes, cut into 1/2-inch dice
2 cups red lentils, picked over and rinsed
4 cups homemade or low-sodium chicken stock
4 cups water
1 dried bay leaf
1 teaspoon coarse salt
Freshly ground pepper
1/2 cup low-fat plain yogurt, for serving
2 teaspoons canola or peanut oil
1 piece (about 5 inches) fresh ginger, peeled and cut into very thin strips (about 1/8 by 2 inches)

Steps:

  • In a large, heavy-bottom pot, heat oil over medium-high heat. Add onion, garlic, ginger, cumin, and curry powder; cook, scraping any browned bits from bottom of pot with a wooden spoon, until onion is soft and light golden, about 10 minutes. Spicy and warming, dal adas is a popular southern Iranian red lentil soup or stew reminiscent of Indian masoor dal. The dish is brightened with tamarind, an ingredient commonly used in the south of Iran to add the requisite Iranian tang to dishes. For ease, use tamarind concentrate, which can be found at most Middle Eastern, Asian and Latin markets, plus many supermarkets. Dal adas can be served as a soup, as done here, with a side of flatbread. If you prefer to serve it as a stew over rice, reduce the water amount by about one cup.

1 large yellow onion, finely chopped
6 large garlic cloves, finely chopped

12 fresh cilantro sprigs, leaves set aside for garnish and stems finely chopped (about 1 tablespoon)
Kosher salt (such as Diamond Crystal) and black pepper

  • Reduce the heat to low and stir in the cinnamon. Add the tamarind paste or lime juice, 1 tablespoon at a time, tasting as you go to ensure it hits just the right bright and tangy notes to balance the heat. Taste and adjust seasoning as needed, then cover and simmer for 10 minutes more, until all the flavors meld.
  • Garnish with the reserved cilantro leaves and serve with flatbread or rice, if desired.
