Yield 4-6 servings

Number Of Ingredients 9

1 pound pasta
Kosher salt
1/2 cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
1/2 teaspoon freshly ground black pepper
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
  • Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 tsp. salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6-8 minutes.
  • Toss pasta with tomato sauce and basil. Top with Parmesan.

Tips:

  • Use ripe cherry tomatoes: The riper the tomatoes, the sweeter and more flavorful they will be. Look for tomatoes that are deep red in color and free of blemishes.
  • Cook the tomatoes briefly: Overcooking the tomatoes will make them mushy. Cook them just until they are softened and slightly caramelized.
  • Use a good quality olive oil: Olive oil is a key ingredient in this dish, so make sure to use a good quality one. Extra virgin olive oil is the best choice.
  • Season the dish to taste: Don't be afraid to add more salt, pepper, or red pepper flakes to taste. You can also add a squeeze of lemon juice for a bit of brightness.
  • Serve the dish immediately: This dish is best served immediately, while the tomatoes are still warm and juicy.

Conclusion:

This spaghetti with cherry tomatoes recipe is a quick, easy, and delicious meal that is perfect for a weeknight dinner. It is also a great way to use up any leftover cherry tomatoes you may have. The combination of sweet tomatoes, savory garlic and onions, and tangy red pepper flakes is sure to please everyone at the table.
