1 cup grated Parmesan cheese, divided

1 spaghetti squash (med-smallish)
1 cup spaghetti sauce or 1 cup fire-roasted tomatoes
1/2 cup grated parmesan cheese
1 cup mushroom (sliced or diced)
1 small sweet onion
1/2 lb ground beef (optional)
1/2 cup Italian sausage (optional)
1 tablespoon butter (may use just oil if vegan)
1 tablespoon olive oil
1 cup shredded mexican cheese or 1 cup Italian cheese blend
1 scoop sour cream or 1 scoop Greek yogurt

Steps:

  • 1. Cut spaghetti squash in half (length wise). Scoop out seed from center. Put in baking pan cut side down. Pour in 2 cups water (enough to cover bottom of pan plus a little). Cover with foil. Bake 350 degrees for approximately one hour - depending on size. Test for doneness with a fork. Fork should pierce the squash easily. (if you like your squash less done then cook accordingly).
  • 2. When done take fork/spoon and scrape out the fibers of the squash. Drain well to get rid of liquid.
  • WHILE SQUASH IS BAKING:
  • 3. Brown up ground beef and Italian sausage. Drain. Set aside.

  • 5. Sautee onion in butter/oil. When onions start to brown add mushrooms. When done add in spaghetti sauce and/or fire roasted tomatoes. Heat til warm. Remove from heat.
  • 6. Mix in baked squash, ground beef, sausage and parmesan cheese. Transfer to baking dish. Top with 1 cup. shredded cheese.
  • 7. Bake 350 until cheese is melted and slightly browning. About 1/2 hour.

2 1/4 lbs spaghetti squash, medium
12 ounces Italian sausage, ground
1 1/2 cups fresh mushrooms, sliced
1 green bell peppers or 1 red bell pepper, chopped
1/3 cup onion, chopped
3 garlic cloves, minced
4 1/4 ounces olives, chopped
1/2 teaspoon dried Italian seasoning, crushed
1 1/2 cups red pasta sauce
1 1/2 cups mozzarella cheese, shredded
1/8 teaspoon pepper
1/4 cup water

Steps:

  • Halve squash crosswise; remove seeds.
  • Place cut sides down in a 2 qt rectangular baking dish, add 1/4 c water, cover with ventilated plastic wrap and microwave on HIGH for 10-15 minutes or until squash separates when pierced with a fork. Rearrange once for even baking. DO NOT over cook squash or it will be mushy.

1 -2 teaspoon garlic powder

Steps:

  • Wash the spaghetti squash. Pierce the rind 4-5 times with a sharp knife. Place in oven-proof pan. Bake in preheated 375 degree oven until soft, 1 - 1 1/2 hours. Remove from oven and reduce heat to 350 degrees. (Alternatively, place pierced squash on paper-towel lined plate and microwave 10-12 minutes.).

1 spaghetti squash
1 large carrot, sliced on the diagonal
2 stalks celery, sliced on the diagonal
1 large yellow onion, diced
1 red bell pepper, peeled, seeded and diced
2 tablespoons extra virgin olive oil
28 ounces tomatoes, diced (if using fresh, peel and seed)
red pepper flakes (or one small hot red pepper, minced)
1 teaspoon dried basil (I use a tablespoon of fresh when I have it)
1/2 teaspoon dried oregano
1 pinch ground allspice
3 garlic cloves, chopped (or more)
3/4 lb part-skim mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Place the spaghetti squash in a large pot of water (it should float) and bring to a boil; lower heat, cover and boil gently for 50 minutes.
  • Another option is to bake the squash first-- cut it lengthwise and place the halves skin-side down in a baking dish with an inch of water; cover the dish with foil and bake at 350º F for about 45 minutes, or until meat is tender.
  • While squash is cooking, peel and slice the carrots, celery, onion and bell pepper.
  • Heat olive oil in a skillet and add the onion and carrot, with some water to prevent sticking. Sauté over medium heat for 5 minutes. Add remaining vegetables with some red pepper flakes and a dash of salt, if desired. Sauté, stirring frequently, till vegetables are barely tender, about 10 minutes.
  • Pre-heat oven (if you are cooking squash on top of the stove)to 350 degrees F.
  • Add crushed tomatoes, basil and oregano to taste, and a sprinkle of ground allspice. Squeeze in 2-5 cloves of garlic. Simmer uncovered for 15 minutes. Meanwhile, grate the mozzarella and Parmesan.
  • Remove squash from pot or oven and allow to cool until you can handle it. If it is whole, cut it in half lengthwise, then remove seeds with a spoon and squeeze any excess water out of meat.
  • Remove meat and break it up into strands with a fork or potato masher. Mix squash well with vegetables and put half in the bottom of a large baking dish. Top with half the cheeses, the rest of the squash, and then the rest of the cheeses.
  • Bake for 30 minutes or until cheese is bubbly and slightly browned. Let cool 15-20 minutes before serving.

2 spaghetti squash, halved and seeded
vegetable oil cooking spray
salt and ground black pepper to taste
1 pound ground turkey
1 (16 ounce) can enchilada sauce, divided
6 ounces crumbled queso fresco
1 (1 pound) package shredded Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Spray insides of spaghetti squash with cooking spray. Season with salt and black pepper. Place squash, cut-side down, on the baking sheet.
  • Bake in the preheated oven until easily pierced with a knife, about 1 hour. Flip and let cool until easily handled, about 10 minutes.
  • Scrape insides of squash into spaghetti strands using a fork. Spread evenly into a 9x13-inch baking dish.
  • Place turkey in a large skillet over medium heat; cook and stir until browned, 5 to 8 minutes. Stir half of the enchilada sauce into the skillet.
  • Spread turkey mixture evenly over squash in the baking dish. Scatter queso fresco then Mexican cheese over turkey layer. Top with remaining enchilada sauce.
  • Bake in the preheated oven until cheese is melted, about 15 minutes.

1 spaghetti squash, halved lengthwise
1 tablespoon vegetable oil
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon dried basil
2 plum tomatoes, chopped
1 cup low fat cottage cheese
1/2 cup mozzarella cheese
1/4 cup chopped parsley
1/4 teaspoon salt
1/4 cup grated parmesan cheese
3 tablespoons seasoned bread crumbs

Steps:

  • Preheat oven to 400F.
  • Coat a baking sheet with cooking spray.
  • Place the squash, cut side down, on the sheet.
  • Bake for 30 minutes or until tender when pierced with a sharp knife.
  • Allow to cool slightly.
  • With a fork, scrape the squash strands into a large bowl.
  • Meanwhile, warm the oil in a medium skillet set over medium heat.
  • Add the onion, garlic and basil.
  • Cook for 4-5 minutes or until the onion is soft.
  • Add the tomatoes.
  • Cook for 3 to 4 minutes, or until the mixture is dry.
  • To the bowl with the squash, add the cottage cheese, mozzarella, parsley, salt and the onion mixture.
  • Stir well to mix all ingredients.
  • Spray a 9x13 baking dish with cooking spray.
  • Pour mixture into prepared dish.
  • Sprinkle with the Parmesan cheese and bread crumbs.

1 spaghetti squash
1 (15 ounce) can black beans, rinsed and drained
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can diced tomatoes with green chilies
1 (4 ounce) can green chilies
1 (3 7/8 ounce) can sliced black olives
2 teaspoons cumin
2 teaspoons cilantro
1 teaspoon cayenne pepper
2 cups shredded cheddar cheese

Steps:

  • Pierce the spaghetti squash all over with a knife.
  • Put in microwave for 10 minutes (or until skin is soft to the touch).
  • Remove squash and let cool (however long you want).
  • Cut squash in half and remove the seeds.
  • Use a fork to scrape the insides into a large bowl.
  • Add all other ingredients to the squash and stir together.
  • Put in casserole and top with cheese.
  • Bake in 350 degree oven for 30 minutes, or until cheese bubbles.

1 (4 lb) spaghetti squash
4 Italian turkey sausage links, casings removed (about 12 oz.total)
2 tablespoons parmesan cheese, shredded
2 teaspoons garlic and herb seasoning (I use Mrs. Dash)
1 medium tomatoes, diced
1 cup chopped Baby Spinach

Steps:

  • Preheat oven to 350 degrees. Mist a 9x13 baking pan with Pam. Cut squash in half lengthwise, scoop out seeds and place cut side down in baking pan. Bake 45 minutes until tender.
  • Remove squash from oven and let cool slightly. Remove squash from pan, and using a fork, scrape out flesh back into pan. Spread out slightly.
  • Mist a large skillet with Pam. Crumble sausage into skillet and cook over med-high heat until no longer pink, breaking into small pieces with spoon. Remove from heat.
  • Sprinkle 1 tbsp parmesan cheese and 1 tsp Mrs. Dash over squash. Top with tomato spinach and crumbled sausage; sprinkle with remaining 1 tbsp parmesan and remaining 1 teaspoons seasoning. Lightly coat the mixture's surface with Pam.
  • Bake 20-25 minutes more, or until casserole heats through and cheese melts.

1 spaghetti squash, halved and seeded
1 pound lean ground beef
½ cup finely chopped onion
½ cup minced bell pepper
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 (14.5 ounce) can diced tomatoes, drained
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place squash in baking pan; pour in enough boiling water to come 1/2-inch up the sides of dish.
  • Bake in the preheated oven until squash is tender, 40 to 45 minutes. Remove from oven; cool until easily handled, 7 to 10 minutes.
  • Reduce oven to 350 degrees F (175 degrees C). Scoop out squash; separate strands with a fork. Reserve shells.
  • Cook beef, onion, and bell pepper in a skillet over medium heat until the meat is no longer pink, about 5 minutes; drain. 1 spaghetti squash (3 pounds)
1 lb lean ground beef
1 cup purple onion, diced
3 garlic cloves, mined
1 teaspoon coriander
1 (1 1/4 ounce) package taco seasoning
3/4 cup water
1/2 cup salsa
1 (14 ounce) can black beans, drained and rinsed
1 cup frozen sweet corn
1 lime
3/4 cup cilantro, chopped and divided
3/4 cup cheddar cheese, shredded
salt and pepper
1 cup tortilla chips, coarsely crushed

Steps:

  • Preheat oven to 375°F.
  • Cut squash in half lengthwise and remove and discard seeds.
  • Place squash, cut side down, in 9x13 baking pan. Fill pan with 1/2 in of water.
  • Bake 45 minutes or until skin pierces easily with fork and squash strands can be scraped out easily. Set squash aside to cool and leave oven on at 375.
  • In a large pan, cook beef and onions over medium heat until beef is no longer pink.
  • Add garlic and coriander and cook for 2 minutes.
  • Add taco seasoning and 3/4 cup water and bring to a boil. Reduce heat to simmer and add salsa, black beans and corn. Cook 5 minutes.
  • Turn off heat on stove and add the lime, 1/2 cup of the cilantro and all of the cheese. Mix well.
  • Taste mixture and add salt and pepper as desired.
  • Using a fork, remove spaghetti-like strands from the squash and place strands in the meat mixture. Toss well.
  • Rinse baking pan used to cook squash, dry and spray with nonstick cooking spray.
  • Add mixture to casserole and sprinkle with tortilla chips.
  • Bake for 20 minutes.
  • Serve with sour cream and remaining 1/4 cup of chopped cilantro.

I like to make this on the weekend to reheat during the week to cut down on cooking after work. Can be reheated in the oven with a cover and comes out fine. Serve with a green salad or a side vegetable.

1 spaghetti squash (3-4 lbs)
1 cup onion, chopped
4 garlic cloves, minced
2 medium fresh tomatoes, chopped
8 ounces fresh mushrooms, sliced

1 dash cayenne
1 cup fat-free cottage cheese (can also use non-fat ricotta cheese)
1 cup part-skim mozzarella cheese, shredded
1/3 cup romano cheese, grated, divided
1/4 cup fresh parsley, chopped
2 tablespoons fresh basil, torn
1 tablespoon fine seasoned breadcrumbs

Steps:

  • Cook the squash following one of the methods found at recipe #77554 "How to Cook Spaghetti Squash," posted by Johnney (thanks, Johnney!).
  • Using a fork, scrape the flesh of the squash into spaghetti strands into a large bowl. Set aside.
  • Spray a 10 inch skillet with non-stick spray. Add onion, garlic, tomato, mushrooms, salt and peppers. Saute until veggies are soft and water is evaporated. Remove from heat.
  • In a very large mixing bowl, combine cottage cheese, mozzarella, half of the romano cheese, parsley and basil. Mix well.
  • Add the sauteed veggies and combine.
  • Add the spaghetti squash, folding it into the mixture.
  • Spray a 13x9 inch baking dish with non-stick spray. Layer the squash mixture evenly.
