1 lb extra-lean ground beef round
1/2 lb ground turkey
3/4 c salsa
3/4 c soft bread crumbs
1 c chopped onion
1/2 c whole kernel corn
2 large eggs, lightly beaten
2 clove garlic, minced
2 tsp chili powder
1 tsp ground cumin
1/4 tsp black pepper
1/8 tsp salt
1/4 c tomato sauce
1 Tbsp ketchup
1 tsp brown sugar

Steps:

  • 1. Preheat oven to 350°F. Lightly grease a loaf pan, or 3 or 4 mini loaf pans. You may pre-cook the chopped onions and corn kernels in the microwave for 1-2 minutes if you like; this is supposed to help the meatloaf retain its "slice-ability." I like the flavor of the precooked vegetables.
  • 2. In a large bowl, combine the beef, turkey, salsa, bread crumbs, onions, corn, eggs, garlic, chili powder, cumin, pepper, and salt. Mix well. Form into a loaf and place in the prepared loaf pan. May also be divided evenly into 3 or 4 mini loaf pans.
  • 3. In a small bowl, combine the tomato sauce, ketchup, and brown sugar. Spread over the top of the meat loaf. Cover with foil and bake for 1 hour, or until a meat thermometer reads at least 160°F. Uncover and bake for 5 minutes more, or until the top browns slightly. Let stand 10 minutes before slicing.
  • 4. If using mini loaf pans, they only take a total of 30 minutes.
  • 5. Recipe Notes To freeze, remove the cooled cooked loaf from the pan. Wrap with a double layer of freezer-quality foil. To use, thaw overnight in the refrigerator. Bake the foil-wrapped loaf at 350°F for 20 minutes, or until hot.

4 garlic cloves, minced
1 small red onion, minced
2 -3 plum tomatoes, chopped

1/4 cup brown sugar

1/4 cup Worcestershire sauce
2 tablespoons hot sauce
2 teaspoons salt

4 medium cloves garlic, smashed and peeled
1 large jalapeno pepper, seeded and cut into quarters
1 medium onion, peeled and cut into 2-inch chunks
1 small red bell pepper, seeded, de-ribbed and cut into 2-inch chunks
2/3 cup fresh cilantro
1 1/3 pounds mild or unseasoned pork sausage, removed from casing
1/3 cup unseasoned dried bread crumbs
2 tablespoons chili powder
1 scant tablespoon cumin
1 scant tablespoon dried oregano

Steps:

  • Place a rack in the center of the oven and heat to 350 degrees.
  • Place the garlic and jalapeno in the bowl of a food processor. Pulse 10 times to coarsely chop. Add onion, and pulse 10 more times. Add the bell pepper and cilantro and pulse 10 more times. There should be about 3 cups vegetables chopped medium fine.
  • Combine all of the ingredients.
  • Divide the mixture into 4 equal parts. Form into mounded ovals that do not touch in a 9-by-13-inch heatproof glass pan.
  • Bake for 30 minutes. (Meat temperature can be checked with a thermometer; it should be 145 degrees.) Remove from oven, and let rest 5 minutes. Using a pancake turner, remove each loaf and serve.

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat.
