My mother made this potato salad for me as a boy growing up in Spanish Fort, Alabama (on the Gulf of Mexico). I have re-created it with a slight modern tangy twist. I know you will like it! Best taste is achieved when the salad is covered and placed in refrigerator overnight.

Tips:

  • Choose the Right Potatoes: For the best potato salad, select firm, waxy potatoes like Yukon Gold, Red Bliss, or New Potatoes. These varieties hold their shape well when cooked and won't become too mushy.
  • Cook Potatoes Properly: Boil the potatoes in salted water until they are tender but still have a slight bite to them. Avoid overcooking, as this will make them too soft and fall apart.
  • Cool Potatoes Thoroughly: After boiling, drain the potatoes and immediately transfer them to a bowl filled with ice water. This will stop the cooking process and help the potatoes retain their shape.
  • Use Fresh Ingredients: For the best flavor, use fresh herbs, such as dill and chives, and high-quality mayonnaise. Freshly squeezed lemon juice also adds a nice tang.
  • Adjust Seasoning to Taste: Taste the potato salad and adjust the seasoning as needed. You may want to add more salt, pepper, or lemon juice to suit your preferences.

Conclusion:

With its creamy, tangy dressing, tender potatoes, and fresh herbs, this Sour Cream and Dill Potato Salad is a classic side dish that's perfect for any occasion.
