Tips:
- For the best flavor, use dried beans that have been soaked overnight. If you don't have time to soak the beans, you can use canned beans, but rinse them well before using.
- Be sure to cook the beans until they are tender but not mushy. This will take about 1 hour for dried beans and 30 minutes for canned beans.
- When making the sausages, be sure to mix the ingredients well. The mixture should be firm enough to hold its shape, but not too dry.
- If you don't have a sausage stuffer, you can use a piping bag fitted with a large tip to fill the sausage casings.
- Smoke the sausages over indirect heat for 1-2 hours, or until they are cooked through. The internal temperature of the sausages should reach 165 degrees Fahrenheit.
- Serve the sausages hot with your favorite sides.
