SLOW-ROASTED PORK WITH CITRUS AND GARLIC

Slow-Roasted Pork with Citrus and Garlic image

Provided by Food Network Kitchen

Time 2h30m

Yield 8 servings

Number Of Ingredients 14

10 cloves garlic
2 tablespoons fresh oregano
1 tablespoon fresh thyme
2 tablespoons coriander seeds
2 teaspoons cumin seeds
4 bay leaves
Kosher salt and freshly ground pepper
1 6-to-8-pound Boston butt pork shoulder
Juice of 6 oranges, peels reserved
Juice of 4 lemons, peels reserved
Juice of 4 limes
1/4 cup Worcestershire sauce
3/4 cup extra-virgin olive oil
3 white onions, thinly sliced

Steps:

  • Pulse the garlic, oregano, thyme, coriander and cumin seeds, bay leaves, 2 tablespoons salt and 1 teaspoon pepper in a food processor to make a thick paste. Trim off all but a thin layer of fat from the pork, then make deep slits all over the roast (about every 2 inches) with a paring knife. Rub the spice paste over the pork and into the slits.
  • Mix the citrus juices, Worcestershire sauce and olive oil in a large glass bowl. Submerge the pork in the marinade and top with the onions and reserved orange and lemon peels. Cover with plastic wrap and refrigerate at least 8 hours or up to 2 days. Bring to room temperature 1 hour before roasting.
  • Preheat the oven to 450. Remove the citrus peels from the bowl and refrigerate. Place the pork on a rack in a large roasting pan (reserve the marinade and onions); roast, uncovered, about 1 hour. Add the marinade to the pan and pile the onions on top of the meat. Cover with foil, lower the oven temperature to 350 and roast 2 more hours. Uncover, place the citrus peels around the pork and continue to roast, basting occasionally, until the meat browns and a thermometer inserted into the bottom half registers 190, 1 hour 30 minutes to 2 hours.
  • Transfer the pork to a cutting board and let rest 10 minutes. Meanwhile, skim any excess fat from the pan juices. Slice the pork and serve with the onion and pan juices. Garnish with citrus peels.

GARLIC ROAST PORK LOIN

Garlic Roast Pork Loin image

Provided by Food Network

Number Of Ingredients 6

2 1/2 to 3 1/2 pound boned and rolled pork loin (8 to 10 inches), bones kept if available
4 cloves garlic, smashed, peeled, and cut lengthwise into thin slivers
Few sprigs rosemary, optional
Kosher salt, to taste
Freshly ground black pepper, to taste
1/2 cup wine, for deglazing

Steps:

  • Place rack in center of oven. Heat oven to 500 degrees. With the point of a paring knife, make 1/2-inch slits toward the center all around the roast. Insert the garlic in the slits, accompanied by a needle of rosemary, if using. Rub roast generously with salt and pepper. Place roast and bones, if available, in a roasting pan just large enough to hold them. Roast for 45 to 50 minutes, or until meat reaches an internal temperature of 140 degrees. The meat might still be slightly pink, but this is fine. Don't overcook the roast, or it will be dry and unappealing. Remove roast and bones to a platter. Let meat rest before slicing across. Snip off strings. Juices will collect better in a platter than on a cutting board.

SLOW-ROASTED GARLIC

Slow-Roasted Garlic image

Adapted from Deborah Madison's book Vegetarian Cooking for Everyone. This is the best method for roasting garlic. It creates the smoothest roasted garlic with the best flavor. It enriches and smooths the flavor and it great in just about everything (well, except desserts). Yield depends on the size of your head of garlic. This produces surprisingly little (perhaps 2 tbs the first time I did it), so if you would like a larger quantity you may want to double or triple the recipe.

Categories     Spreads

Time 1h20m

Yield 1 head roasted garlic

Number Of Ingredients 3

1 head garlic
1 teaspoon olive oil (approx) or 1 teaspoon butter (approx)
2 tablespoons water (approx) or 2 tablespoons stock (approx)

Steps:

  • Preheat oven to 350°F.
  • Peel the head of garlic of all the papery skin with the exception of the very last layer.
  • Garlic should still hold together in its original shape, but individual cloves should be visible.
  • Rub head and inside of oven proof dish (a ramekin, custard dish will work) with butter or olive oil.
  • Put water/stock in bottom of dish.
  • Cover dish with foil and place in preheated oven for 45 minutes.
  • After the 45 minutes are up, uncover the dish and bake for an additional 30 minutes.
  • Remove garlic and dish from oven and allow to cool.
  • After cooled, remove cloves and squeeze the roasted garlic from the cloves into a dish or container.
  • The roasted garlic should be a light yellowy-brown and very soft and sticky.
  • Store in the refrigerator and use in place of garlic for a milder and delicious flavor.

Tips:

  • Choose the right cut of pork: A pork loin roast is a lean and flavorful cut that is perfect for slow roasting. Look for a roast that is about 3 pounds in weight and has a good layer of fat on the outside.
  • Prepare the pork: Before roasting, season the pork loin with salt, pepper, and your favorite herbs and spices. You can also rub the pork with olive oil to help keep it moist during cooking.
  • Roast the pork: Place the pork loin in a roasting pan and cook it in a preheated oven at 325°F for about 2 hours, or until the internal temperature of the pork reaches 145°F. Baste the pork with its own juices every 30 minutes or so to help keep it moist.
  • Let the pork rest: Once the pork is cooked, remove it from the oven and let it rest for about 10 minutes before carving. This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.
  • Serve the pork: Slice the pork loin and serve it with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or a simple green salad.

Conclusion:

Slow-roasted pork loin is a delicious and easy-to-make meal that is perfect for any occasion. With a little planning and preparation, you can create a dish that your family and friends will love. So next time you're looking for a simple and satisfying meal, give slow-roasted pork loin a try.
