3 cups mashed cooked sweet potatoes (about 3 or 4 large ones)
1 cup sugar 1 st
ick melted butter
2 eggs slightly beaten
1 tsp. vanilla
1 tsp. cinnamon
1/4 cup sour cream
Topping:
1 stick butter, melted
1 cup brown sugar
1/3 cup flour
1 1/2 cups chopped pecans

Steps:

  • Preheat oven to 350 degrees. Mix together mashed sweet potatoes, sugar, butter, vanilla, cinnamon, eggs and sour cream. Spread in a casserole dish. Mix together the topping ingredients and sprinkle evenly over the sweet potatoes, covering the top as much as possible. Bake for 25-30 minutes until topping is browned and crunchy.

500g sweet potatoes
125g butter, plus extra for the dish
125g light brown soft sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste
35g butter
75g plain flour
75g light brown soft sugar
50g pecans, chopped

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Tip the peeled sweet potatoes into a large bowl, add the butter and mash with a potato masher until completely smooth. Tip in the brown sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Lightly butter a 20 x 30cm baking dish, then scrape in the sweet potato mixture. To make the topping, rub the butter into the flour, then stir in the brown sugar, pecans and a good pinch of salt. Sprinkle the topping evenly over the sweet potato filling, then bake for 45-50 mins until golden on top.

3 lb yellow squash, sliced or diced
1/2 c diced Vidalia onion, optional
1 can(s) cream of mushroom or chicken soup, 10.5 oz.
1 c mayonaise
1 egg
8 oz shredded cheddar cheese (sharp is my favorite)
1 tsp salt
1/2 tsp fresh ground black pepper
TOPPING
2 sleeves of Ritz crackers, crushed
1 stick melted butter

Steps:

  • 1. Preheat oven to 350.
  • 2. Wash and slice squash into small medallions or dice into smaller pieces if the squash is large. I prefer smaller sized squash since it is tender. Put squash into a large bowl for mixing with the filling.
  • 3. In a separate bowl, mix together the soup, mayo, eggs, cheese, onions, salt, and pepper.
  • 4. Pour over squash.
  • 5. Stir until well mixed.
  • 6. Then pour into a casserole dish for baking.
  • 7. Crush crackers while in "tubes" (I usually wrap them in a dish towel to avoid a mess, and use a rolling pin or meat tenderizer) or place in a resealable plastic bag.
  • 8. Pour crushed crackers into a bowl. Melt butter in the microwave and stir into crackers until moist.
  • 9. Drizzle on top of casserole. (You can make more or less of the topping. More topping = more yummy!)
  • 10. Bake at 350 degrees until bubbly and brown on top (usually 45-50 minutes). Bake for 30 minutes covered. with foil to help prevent crackers from burning.
  • 11. Then uncover and bake an additional 20 minutes until golden brown on top.
  • 12. ***If you want, you can add a cup of chopped cooked chicken into casserole. Also, adding 2 cups of cooked rice into it makes a delish meal.
