I developed this recipe because I wanted a bread recipe, not cake-like, while living in a 10-foot trailer. This recipe is very low in fat.

4 ripe bananas, mashed
⅔ cup white sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8x4 inch loaf pan and set aside.
  • In a large bowl, sift together the flour, baking powder, and salt. Set aside.
  • In another bowl, mash the bananas and stir in the eggs and sugar. Stir in the flour mixture and mix until just combined, then fold in the chopped nuts (optional). Pour the batter into the prepared pan.

1/3 cup shortening
1/2 cup sugar
2 eggs
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup mashed ripe bananas

  • In a large bowl, cream shortening and sugar. Beat in eggs. ½ cup (125g) butter (room temperature)
1 cup (200g) sugar
2 eggs
6 bananas (350g) very soft bananas (mashed)
1 teaspoon vanilla extract
2 cups (250g) flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tsp salt

Steps:

  • Pre-heat the oven to 180ºC/350°F and grease and line a standard size loaf tin (approximatley 20cmx12cm / 9" x 5") with baking paper.
  • In the bowl of a mixer, beat the butter and sugar together until light and creamy. Add the eggs one at a time, mixing well after each addition. Scrape down the bowl with a rubber spatula.
  • Beat in the bananas. At this point, your batter will split and look curdled. Don't be alarmed, the flour will fix that.
  • Add the dry ingredients then mix until just combined.
