- Preheat oven to 350 degrees F (175 degrees C). Grease one 8x4 inch loaf pan and set aside.
- In a large bowl, sift together the flour, baking powder, and salt. Set aside.
- In another bowl, mash the bananas and stir in the eggs and sugar. Stir in the flour mixture and mix until just combined, then fold in the chopped nuts (optional). Pour the batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 55 to 65 minutes or until bread tests done. Remove from oven and cool on a rack for 10 minute, then remove from pan and cool completely. Slice and serve.

- In a large bowl, cream shortening and sugar. Beat in eggs. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Pour into a greased 8x4-in. loaf pan. , Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Let stand for 10 minutes before removing from pan; cool on a wire rack.

- Beat in the bananas. At this point, your batter will split and look curdled. Don't be alarmed, the flour will fix that.
- Add the dry ingredients then mix until just combined.

- Bake for 45 minutes or until a skewer inserted comes out clean. Cover with foil halfway to prevent over browning.
