1 tablespoon sugar
Kosher salt
4 tablespoons unsalted butter, cut into small pieces and frozen
3/4 cup cold rendered leaf lard or regular lard (5 ounces), cut into small pieces
1/4 to 1/2 cup ice water
3/4 cup plus 2 tablespoons honey (preferably organic wildflower)
3 tablespoons unsalted butter
4 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon freshly grated nutmeg

Steps:

  • Crust:Pulse flour, sugar, and 1 teaspoon salt in a food processor until combined. 6 assorted apples, such as Golden Delicious, Fuji and Honeycrisp (1 3/4 to 2 pounds)
1 to 1 3/4 cups water
1/2 cup plus 2 teaspoons buckwheat honey
1 tablespoon sugar
1 1/2 cups heavy cream
2 large eggs, lightly beaten
2 teaspoons pure vanilla extract
1/4 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, sugar and salt in a medium bowl. Add the butter and work it into the flour with your fingers until it is in small bean-size pieces.
