Broccoli stems are tender and delicious, but it's important to cut away the dried-out base and peel the tough skin of thicker ones.

Yield 8 servings

Number Of Ingredients 12

2 oil-packed anchovy fillets (optional)
1 garlic clove, thinly sliced
1/4 cup fresh lemon juice
2 tsp. Dijon mustard
Kosher salt
1 large egg yolk or 2 Tbsp. mayonnaise
1/2 cup extra-virgin olive oil
3 Tbsp. grated Parmesan, plus more shaved for serving
2 medium heads of broccoli (about 1 1/2 lb.)
1/4 head of savoy or Napa cabbage
Finely grated lemon zest (for serving)
Freshly cracked black pepper

Steps:

  • Using the side of a chef's knife, mash anchovies, if using, and garlic on a cutting board until a smooth paste forms. Transfer paste to a large bowl and whisk in lemon juice, mustard, and a big pinch of salt. Add egg yolk (or mayonnaise) and whisk until smooth. Gradually add oil, whisking constantly until emulsified. Whisk in 3 Tbsp. grated Parmesan.
  • Trim woody ends from broccoli stems, preserving as much stem as possible. Peel any thick stems to expose tender inner cores. Cut off florets as close to the dark green flowers as possible and break into bite-size pieces. Add to bowl with dressing. Starting at the floret ends of the stems, slice very thinly crosswise and add to bowl. Thinly slice cabbage crosswise (you should have about 2 cups) and add to bowl with broccoli. Toss until broccoli and cabbage are combined and evenly coated with dressing; season with salt. Let sit 10 minutes.
  • Top salad with shaved Parmesan, some lemon zest, and a few healthy grinds of pepper.
  • Do Ahead
  • Dressing can be made 2 days ahead. Cover and chill.

GRILLED BROCCOLI

This grilled broccoli is dressed simply in tamari, olive oil and balsamic vinegar. It results in crisp-tender florets that are beautifully sweet and salty beneath the smoke.

Provided by Sam Sifton

Categories     dinner, lunch, quick, vegetables, side dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

3 tablespoons tamari or soy sauce
3 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil, plus more for drizzling
1 head broccoli, approximately 2 pounds, cored and cut into 1-inch florets
Kosher salt, to taste
1 tablespoon finely chopped fresh parsley
Flaky sea salt (optional)

Steps:

  • Build a fire in your grill, leaving about 1/3 of grill free of coals, or set a gas grill to high.
  • In a large bowl, whisk together the tamari or soy sauce with the vinegar. Add the olive oil while whisking vigorously. Add the broccoli and toss to coat. Sprinkle lightly with kosher salt.
  • Place a grill basket on the grill and add the broccoli to it. Grill, tossing frequently, until the florets are crisp at the edges and tender within, with just a little bit of bite to them, approximately 10 to 12 minutes. If you don't have a grill basket, lay the florets out on the grill in a single level and use tongs to turn them often. More work, same result.
  • Transfer the cooked broccoli to a platter, drizzle with olive oil, sprinkle with parsley and, if using, a pinch or two of flaky sea salt.

Tips:

  • Choose the right broccoli: Look for broccoli crowns that are deep green in color and have tightly closed florets. Avoid any broccoli that has yellow or wilted florets.
  • Prepare the broccoli properly: Cut the broccoli crowns into 1-inch florets and rinse them thoroughly under cold water. Pat the florets dry with paper towels.
  • Marinate the broccoli: Marinating the broccoli in a mixture of olive oil, lemon juice, garlic, and Parmesan cheese helps to add flavor and prevent the broccoli from drying out while grilling.
  • Grill the broccoli over high heat: This will help to create a slightly charred exterior and tender-crisp interior.
  • Serve the broccoli immediately: Grilled broccoli is best served hot off the grill. Drizzle with additional olive oil, lemon juice, and Parmesan cheese, if desired.

Conclusion:

Grilled Caesar broccoli is a delicious and healthy side dish that can be enjoyed as part of a main meal or as a snack. It is also a great way to get your daily dose of vegetables. With its simple preparation and delicious flavor, grilled Caesar broccoli is sure to become a favorite in your household.
