Tips:

  • Use large shrimp. This will ensure that the shrimp are cooked evenly and not overcooked.
  • Defrost the shrimp properly. If the shrimp are frozen, thaw them in the refrigerator overnight or under cold running water for about 30 minutes.
  • Cook the shrimp until they are opaque and pink. Overcooked shrimp will be tough and rubbery.
  • Use a good quality cognac. This will make a big difference in the flavor of the sauce.
  • Reduce the cognac sauce until it is thick and syrupy. This will help to concentrate the flavors.
  • Serve the shrimp with the cognac sauce immediately. This dish is best enjoyed when it is hot and fresh.

Conclusion:

Shrimp with Cognac Sauce is a classic French dish that is easy to make and always a crowd-pleaser. The cognac sauce is rich and flavorful, and the shrimp are cooked to perfection. This dish is perfect for a special occasion or a weeknight meal.
