ALMOST-FAMOUS ROSEMARY BREAD

Almost-Famous Rosemary Bread image

Provided by Food Network Kitchen

Time 4h

Yield 4 small loaves

Number Of Ingredients 7

1 1/4-ounce packet active dry yeast
2 teaspoons sugar
2 tablespoons extra-virgin olive oil, plus more for brushing and serving
2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons dried rosemary
1 teaspoon fine salt
1/2 teaspoon kosher salt Freshly ground pepper

Steps:

  • Stir the yeast, sugar and 1/4 cup warm water in a large bowl (or in the bowl of a stand mixer). Let sit until foamy, about 5 minutes.
  • Add 1 tablespoon olive oil, the flour, 1 1/2 tablespoons rosemary, the fine salt and 3/4 cup warm water; stir with a wooden spoon (or with the dough hook if using a mixer) until a dough forms.
  • Turn the dough out onto a lightly floured surface and knead, dusting lightly with flour if necessary, until smooth and elastic, about 10 minutes. (Or knead with the dough hook on medium-high speed, adding a little flour if the dough sticks to the bowl, about 8 minutes.)
  • Brush a large bowl with olive oil. Add the dough, cover with plastic wrap and let stand at room temperature until more than doubled, about 2 hours.
  • Brush 2 baking sheets with olive oil. Generously flour a work surface; turn the dough out onto the flour and divide into 4 pieces. Working with one piece at a time, sprinkle some flour on the dough, then fold the top and bottom portions into the middle. Fold in the sides to make a free-form square. Use a spatula to turn the dough over, then tuck the corners under to form a ball. Place seam-side down on a prepared baking sheet. Repeat with the remaining dough, putting 2 balls on each baking sheet. Let stand, uncovered, until more than doubled, about 2 hours.
  • Preheat the oven to 400 degrees F. Bake the loaves 10 minutes; brush with the remaining 1 tablespoon olive oil and sprinkle with the kosher salt and the remaining 1/2 tablespoon rosemary. Continue baking until golden brown, about 10 more minutes. Transfer to a rack to cool. Serve with olive oil seasoned with pepper.

MACARONI GRILL'S ROSEMARY HERBED BREAD FOR BREAD MACHINES RECIPE - (4.7/5)

Macaroni Grill's Rosemary Herbed Bread for Bread Machines Recipe - (4.7/5) image

Provided by Pattywak

Number Of Ingredients 9

1 cup water
3 Tablespoons olive oil
2 1/2 cups flour
1 1/2 teaspoon salt
1 1/2 Tablespoons sugar
1/4 teaspoon Italian seasoning
1 1/2 Tablespoons rosemary
1 Tablespoon yeast
additional rosemary to garnish

Steps:

  • Place ingredients, according to manufacturer's directions into your bread machine. Some call for all liquids, or all dry ingredients first, so know your machine. Set machine to "dough cycle" and wait. (This takes most machines about an hour and a half for a full cycle). Remove from machine when cycle is complete and place on a lightly greased baking sheet. Shape dough by hand, into a rectangular mound, spreading kind of thin, maybe an inch or two of thickness. Cover and let rise in a warm place for about an hour or until doubled in size. (This is a good time to go ahead and turn the oven on to preheat and help warm the kitchen). Brush with a little olive oil, sprinkle with rosemary and salt if desired. (This is the way its done at Macaroni Grill). Bake at 375°F for 20-25 minutes until crust is golden and crispy. Bread is meant to be a flatter shape and not a high rising bread. Have everyone tear their pieces of bread with their hands, and serve with olive oil flavored with fresh ground pepper.

ROMANO'S MACARONI GRILL PENNE RUSTICA

Romano's Macaroni Grill Penne Rustica image

The sauce is the key to this recipe....HEAVY CREAM, PARMESAN CHEESE, WINE, etc. with CHICKEN & SHRIMP, cooking the penne pasta is the easy part. This recipe makes an ample amount, and too tricky for me to attempt to scale it down. I am posting it to take advantage of Recipezaar's calculations to reduce a recipe. I'm not sure how much this recipe feeds, but I am going to guess at 8-10 servings.

Tips:

  • Use fresh rosemary: Fresh rosemary has a more intense flavor than dried rosemary. If you can find it, use fresh rosemary for the best results.
  • Don't overmix the dough: Overmixing the dough will make the bread tough. Mix the dough just until it comes together.
  • Let the dough rise in a warm place: The dough will need to rise in a warm place for about an hour. This will help the dough to double in size.
  • Bake the bread at a high temperature: The bread should be baked at a high temperature of 400 degrees Fahrenheit. This will help the bread to develop a crispy crust.
  • Brush the bread with butter: After the bread has baked, brush it with butter. This will help the bread to stay moist and flavorful.

Conclusion:

This Romano's Macaroni Grill Rosemary Bread recipe is a delicious and easy-to-make bread that is perfect for any occasion. The bread has a crispy crust and a soft, fluffy interior. The rosemary gives the bread a wonderful flavor. This bread is perfect for serving with soup, salad, or pasta.
