COCONUT RICE KRISPIE® TREATS

Coconut Rice Krispie® Treats image

A coconut twist in the classic school lunch treat! Perfect for kids and if you snag some for yourself too, we won't tell. One thing I love about these is how customizable they are. Lemon coconut? Chocolate coconut? Sure! You can do practically anything with add-ins. These are also good because unlike other recipes, they use condensed milk, which gives it a rich sweetness. It's safe to say these beat the store-bought ones!

Time 55m

Yield 24

Number Of Ingredients 7

1 (14 ounce) can sweetened condensed milk
½ cup coconut milk
1 tablespoon unsalted butter
1 pinch salt
⅔ cup marshmallows
4 cups crispy rice cereal (such as Rice Krispies®)
½ cup coconut flakes, or more to taste

Steps:

  • Combine condensed milk, coconut milk, and butter in a medium pan over low heat. Stir until butter has melted and everything is fully incorporated. Stir in salt.
  • Increase heat to medium-low and add marshmallows. Stir until marshmallows are fully melted into liquid and you have a thick, almost jelly-like consistency; it should stick together and come clean off the sides of the pan.
  • Increase heat to medium and melt the mixture a little bit more so it's a thinner liquid. Remove from the heat and stir in rice cereal and 1/2 cup coconut flakes, making sure all are evenly coated. Let sit and cool for 30 minutes.
  • Wearing plastic gloves, use your hands to roll mixture into 1-inch diameter balls. Top with additional coconut flakes if desired.

AIR FRYER COCONUT MACAROONS

Air Fryer Coconut Macaroons image

Nutty, sweet, and exactly what you expect from a coconut macaroon! The texture is crispy on the outside and somewhat sticky and chewy on the inside. The chocolate adds a nice bitterness that cuts through the sweetness. These are so easy to prepare and would make great gifts, plus, they're easy to freeze!

Time 1h40m

Yield 36

Number Of Ingredients 6

1 (14 ounce) package sweetened flaked coconut
⅔ cup sweetened condensed milk
¾ teaspoon kosher salt
½ teaspoon vanilla extract
2 large egg whites, at room temperature
8 ounces bittersweet chocolate, chopped

Steps:

  • Preheat an air fryer to 320 degrees F (160 degrees C) for 10 minutes. Cut a piece of parchment paper to fit the air fryer basket, leaving 1 inch on each side to use as handles.
  • Mix coconut, condensed milk, salt, and vanilla together in a large bowl.
  • Beat egg whites in a medium bowl with an electric mixer with a whisk attachment on medium-high speed until stiff peaks almost form, about 90 seconds. Fold egg whites into the coconut mixture.
  • Working in batches, spoon level tablespoons of the coconut mixture into rounds and place on the parchment paper, about 6 at time. Carefully transfer the parchment with coconut rounds into the air fryer basket.
  • Cook until golden brown and set, 9 to 10 minutes. Remove parchment from basket, transfer macaroons to a wire rack, and repeat the process with remaining coconut mixture using the same piece of parchment paper.
  • Microwave chocolate in a medium microwave-safe bowl on high power for 30 seconds, then stir. Continue microwaving and stirring in 30 second increments, until melted and smooth, about 90 seconds total.
  • Dip flat bottoms of macaroons into melted chocolate and transfer to a parchment-lined baking sheet to set. Let rest until chocolate firms, about 30 minutes.

Tips:

  • Use unsweetened shredded coconut for a healthier version of these macaroons.
  • If you don't have a food processor, you can use a blender to grind the oats into a fine powder.
  • Be careful not to overmix the batter, as this will make the macaroons tough.
  • Drop the batter by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake the macaroons for 10-12 minutes, or until they are golden brown around the edges.
  • Let the macaroons cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These rice krispies coconut macaroons are a delicious and easy-to-make treat that is perfect for any occasion. They are crispy on the outside and chewy on the inside, with a sweet and nutty flavor. Plus, they are gluten-free and can be made vegan by using vegan butter and eggs. So next time you are looking for a quick and easy dessert, give these rice krispies coconut macaroons a try!
