My mother got this recipe back in the 1950's from the minister's wife. It's been a family favorite ever since--even for those who claim to dislike rhubarb.

2 tablespoons butter
1 cup white sugar
1 egg
¾ cup milk
2 cups sifted all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
2 cups rhubarb, cut into 1/2 inch pieces
2 cups white sugar
4 tablespoons cornstarch
2 ½ cups water
4 tablespoons butter
2 ½ teaspoons grated lemon zest
2 tablespoons lemon juice
¼ teaspoon lemon extract
1 drop yellow food coloring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
  • Sift together the flour, baking powder, salt, cinnamon, nutmeg and cloves. Set aside.
  • In a large bowl, cream together 2 tablespoons butter and 1 cup sugar until light and fluffy. Beat in the egg. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the chopped rhubarb. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 45 to 50 minutes. Allow to cool before slicing.
  • To make the Lemon Sauce: In a saucepan, mix together 2 cups sugar and 4 tablespoons cornstarch. Stir in the water. Cook over medium heat, stirring constantly, until mixture is thickened. Remove from heat and stir in 4 tablespoons butter, lemon zest, lemon juice, and extract (if desired). Stir in 1 or 2 drops yellow food coloring, if using.

1 1/2 cups sugar
1/2 cup vegetable oil
1/3 cup water
1 1/4 teaspoons baking soda
1 teaspoon salt

1 teaspoon ground nutmeg
1 teaspoon vanilla
3 large eggs
1 3/4 cups finely chopped fresh rhubarb
1 cup chopped nuts

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening; lightly flour.
  • In large bowl, beat flour, 1 1/4 cups of the sugar and remaining ingredients except rhubarb, nuts and whipped cream with electric mixer on low speed 1 minute, scraping bowl constantly. 2 cups whole wheat flour
2 tablespoons flax seed meal (optional)
1 cup sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 cup buttermilk
1/2 cup shortening
2 eggs
1 teaspoon vanilla
4 cups chopped rhubarb
1/4 cup water
1/2 cup sugar

Steps:

  • To make rhubarb sauce, place about 4 cups chopped rhubarb in a saucepan with 1/4 cup water and 1/2 cup sugar. Bring to boil, then simmer until cooked down to an applesauce consistency. Let cool.
  • In a large bowl, combine all dry ingredients.
  • Add remaining ingredients. Mix on low speed until all ingredients are blended, then mix on medium speed for 3 minutes.
  • Pour batter into greased and floured 8x11 pan (or two 8 inch round pans).
  • Bake in 350 oven for 35-40 minutes (5-10 minutes less for round pans).
  • Let cool in pan for 10 minutes, then remove to racks and let cool completely.

2.1 cups self-raising flour (300g)
2 teaspoons mixed spice
1 teaspoon ground ginger
1/2 cup dark muscovado sugar (100g)
2/3 cups golden syrup (250g)
1 teaspoon bicarbonate of soda
2 eggs, beaten
3 cups rhubarb, cut into short lengths (300g)
Icing sugar, for dusting

Steps:

  • Heat oven to 356°F (180°C) fan 160C/gas 4 and put the kettle on. Butter and line a deep 7.5-inch (20cm) square cake tin. Sift the flour and spices into a bowl. Beat together the butter and sugar until light and fluffy in the food processor, then beat in the golden syrup. Dissolve the bicarbonate of soda in 1 cup (200ml )boiling water, then gradually pour through the spout of the processor. Pulse in the flour, then add the eggs, mixing briefly. Remove the bowl from the processor, then gently stir in the rhubarb. Pour the mixture into the tin and bake for 50 to 60 mins, until the cake feels firm to the touch and springs back when pressed. Cool in the tin for 5 minutes, then turn out and cool on a wire rack. Dust with icing sugar.
