Another husband-approved recipe. Made a couple times recently because of how easy it is to make! This recipe is easy to double or triple, but you may have to cook a bit longer if doing so.

RENEWAL EGG CASSEROLE

Renewal Egg Casserole image

We have 2 egg casseroles that we use in our house. One is a stuffed french toast casserole (known as "Cursillo Casserole" as it came from a Cursillo weekend) and this one that is a staple on the Christ Renews His Parish weekends at our Parish. Put it together the night before and bake in the morning. I personally use dried bread but others have used fresh. Type of bread is up to you, I use whole wheat.

Time 1h15m

Yield 8-10 serving(s)

Number Of Ingredients 5

12 slices bread, cubed, crusts removed
1 lb bulk pork sausage, cooked and crumbled
12 ounces cheddar cheese, shredded
6 eggs
3 cups milk

Steps:

  • Grease a 9 x 13 pan (I use cooking spray).
  • Mix bread, cooked sausage and cheese together.
  • Pat into bottom of pan.
  • Beat eggs and milk together and pour over the bread mixture.
  • Cover and refrigerate overnight.
  • In the morning, bake uncovered at 350 degrees for 45 minutes until eggs are set.

Tips:

  • For a fluffier casserole, separate the egg yolks and egg whites. Beat the egg whites until stiff peaks form, then fold them into the egg yolk mixture.
  • If you like your casserole more cheesy, add an extra cup of shredded cheese.
  • To make the casserole more flavorful, add some diced ham, bacon, or vegetables.
  • Bake the casserole until the center is set and a toothpick inserted into the center comes out clean.
  • Let the casserole cool for a few minutes before serving to allow it to set.

Conclusion:

The Renewal Egg Casserole is a delicious and easy-to-make breakfast or brunch dish. It is perfect for a crowd and can be made ahead of time. With just a few simple ingredients, you can create a flavorful and satisfying casserole that everyone will love. So next time you are looking for a quick and easy breakfast or brunch recipe, give the Renewal Egg Casserole a try. You won't be disappointed!
