Time 1h10m

Number Of Ingredients 14

4 cups cooked white rice (from 1 1/2 cups uncooked rice, cooled to room temp)
1/2 medium cabbage (sliced into 1/4" wide strips (7 cups sliced))
1 pound ground pork
1 pound ground turkey
1 large onion (divided (1/2 grated and 1/2 finely diced))
2 large eggs
Original Mrs. Dash (or any salt-free all-purpose seasoning)
Salt and black pepper
2 Tbsp finely chopped parsley or dill
1 Tbsp Olive oil
3 Tbsp unsalted butter
1 large carrot (julienned or grated)
2 cups store-bought marinara or homemade
3 cups hot water

Steps:

  • Oil a 9x13 casserole dish, preheat oven to 425˚F.
  • Slice cabbage into 1/4" thin slices. Place in a heat proof bowl, cover with boiling water and let sit 10 min to soften. Drain and squeeze out excess water with your hands.
  • In a large mixing bowl, combine ground turkey, ground pork, drained cabbage and 4 cups cooked rice. Grate 1/2 large onion into meat mixture. Add 2 eggs, 1 tsp Mrs Dash, 1/2 tsp black pepper, 2 tsp salt, and 2 Tbsp finely chopped parsley. Mix well. Form into potato-shaped patties with your hands (each should be about 1/2 cup of the meat mixture). Arrange in oiled casserole.
  • For the sauce, finely dice remaining 1/2 large onion. Heat a large pot over medium/high heat and add 1 Tbsp oil and 3 Tbsp butter. Add diced onion and sauté 5 minutes, stirring occassionally or until softened. Add julienned carrot and cook another 3 minutes or until softened. Add 2 cups marinara and 3 cups hot water and bring to a boil. Add 1/4 tsp salt and 1/4 tsp Mrs Dash, or season to taste.
  • Pour sauce over patties until they are nearly covered. Cover with foil and bake on medium rack at 425˚F for 40 min. To serve, plate the lazy stuffed cabbage and spoon the extra juice over the top. Serve with sour cream (my favorite) or plain Greek yogurt.

Beef and Cabbage (Lazy Golumpki) image

Grew up eating golumpki. Yes I'm mostly Polish, but always wanted more sauce on them and didn't like the 'mushiness' of the burger inside. This is the version I came up with and hope you enjoy!

GOLABKI (STUFFED CABBAGE ROLLS)

Golabki (Stuffed Cabbage Rolls) image

Cabbage leaves are stuffed with ground beef, rice, then simmered in tomato soup. Works great in the oven or a slow cooker. Serve with pan juices and a drizzle of sour cream, or mix the pan juices with sour cream and ladle it over the cabbage rolls. Also, good with mashed potatoes and cucumber and sour cream salad. Cabbage rolls freeze well before or after cooking.

Time 1h50m

Yield 8

Number Of Ingredients 12

1 head cabbage, cored
2 tablespoons butter
1 large onion, chopped
1 pound ground beef
½ pound ground pork
1 ½ cups cooked rice
1 teaspoon finely chopped garlic
1 teaspoon salt, plus more to taste
¼ teaspoon ground black pepper, plus more to taste
3 (10.75 ounce) cans condensed tomato soup
2 (12 fluid ounce) cans tomato juice, or more to taste
½ cup ketchup

Steps:

  • Bring a large pot of lightly salted water to a boil. Place cabbage head into water, cover pot, and cook until cabbage leaves are slightly softened enough to remove from head, 3 minutes. Remove cabbage from pot and let cabbage sit until leaves are cool enough to handle, about 10 minutes.
  • Remove 18 whole leaves from the cabbage head, cutting out any thick tough center ribs. Set whole leaves aside. Chop the remainder of the cabbage head and spread it in the bottom of a casserole dish.
  • Melt butter in a large skillet over medium-high heat. Cook and stir onion in hot butter until tender, 5 to 10 minutes. Cool.
  • Stir onion, beef, pork, rice, garlic, 1 teaspoon salt, and 1/4 teaspoon pepper together in a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place about 1/2 cup beef mixture on a cabbage leaf. Roll cabbage around beef mixture, tucking in sides to create an envelope around the meat. Repeat with remaining leaves and meat mixture. Place cabbage rolls in a layer atop the chopped cabbage in the casserole dish; season rolls with salt and black pepper.
  • Whisk tomato soup, tomato juice, and ketchup together in a bowl. Pour tomato soup mixture over cabbage rolls and cover dish wish aluminum foil.
  • Bake in the preheated oven until cabbage is tender and meat is cooked through, about 1 hour.

LAZY CABBAGE ROLLS

Lazy Cabbage Rolls image

I needed to make cabbage rolls in a hurry one day, so I converted my regular recipe to a quicker variety. These taste every bit as good as the original.

Provided by Chippy

Categories     Weeknight

Time 2h

Yield 8 serving(s)

Number Of Ingredients 15

1/2 head cabbage
1 lb ground beef
6 slices bacon
1 medium onion, chopped
2 cloves garlic, chopped fine
1/4 cup red pepper, chopped fine (optional)
1/4 teaspoon thyme
1/2 teaspoon marjoram
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup uncle ben rice
1 can condensed tomato soup
1 (8 ounce) can tomato sauce
3/4 cup water

Steps:

  • Brown ground beef and set aside.
  • (after browning, I always put the hamburger in a colander and rinse with hot water to remove excess grease) Cook bacon until crisp then crumble.
  • Cook onion, garlic and red pepper (if using) in a small amount of oil until the onion is soft.
  • Add thyme and marjoram.
  • Slice cabbage thinly and put in casserole.
  • Mix ground beef with onion mixture.
  • Then add the bacon, rice, parsley, salt and pepper.
  • Mix well and put over cabbage.
  • Mix soup, water& tomato sauce.
  • Pour over meat layer.
  • Cover and bake for 1 1/2 hours at 350 degrees.

Tips:

  • To save time, use a food processor to chop the cabbage and onion.
  • If you don't have tomato sauce, you can use a can of crushed tomatoes or tomato paste.
  • Serve with mashed potatoes, egg noodles, or rice.
  • For a vegetarian version, omit the ground beef and add an extra cup of vegetables, such as chopped carrots, celery, or mushrooms.
  • To make ahead, assemble the cabbage rolls and freeze them for up to 3 months. When you're ready to cook them, thaw them overnight in the refrigerator and then bake them according to the recipe directions.

Conclusion:

Regina's Lazy Golamki is a delicious and easy-to-make meal that is perfect for busy weeknights. It's also a great way to use up leftover cabbage and ground beef. With its combination of savory ground beef, tangy tomato sauce, and tender cabbage, this dish is sure to please the whole family.
