2 cups marinara (or tomato basil) sauce
1 (14.5 ounce) can diced tomatoes with basil, garlic and oregano (NOT drained)
1 cup uncooked long grain white rice
1 ½ lbs. skinless, boneless chicken breast or chicken tenderloins, diced into bite sized pieces
1 teaspoon Italian seasoning
½ teaspoon salt
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Stir marinara sauce, tomatoes (in their juice), and uncooked rice together in the prepared dish (or in a separate bowl).
  • In a small bowl, combine diced, uncooked chicken with Italian seasoning and salt.
  • Add seasoned chicken to the rice mixture and stir to completely combine. Transfer to prepared baking dish.
  • Cover tightly with foil or with a lid.
  • Bake for 35 minutes, remove the cover, and give the dish a good stir. At this point the chicken should be cooked through and the rice should be just about tender (but still slightly al dente). A Lowcountry favorite that likely descended from West African jollof rice, this classic tomato and rice dish is also sometimes called Carolina red rice - or simply red rice. It often contains sausage, but this version, inspired by how the chef Millie Peartree's mother, Millie Bell, used to make it, relies on bacon for its depth. (Still, if you'd like to add sausage, just let it sear with the vegetables in Step 3.) To start, the "holy trinity" (bell pepper, onion and celery) is cooked in the bacon fat, infusing the cooking liquid. Then, the rice is baked to ensure it's perfectly cooked. Serve this alongside baked chicken or ham, green beans or collard greens, for a full, satisfying meal.

Nonstick cooking spray
6 bacon slices
1 medium Vidalia or other sweet, Spanish or yellow onion, chopped
2 celery ribs, chopped
1 large green bell pepper, chopped
1 teaspoon kosher salt, plus more to taste
2 garlic cloves, minced
2 cups long-grain or Carolina gold rice, rinsed until water runs clear
1 (14-ounce) can tomato purée
1 1/2 cups chicken stock or water, plus more as needed
1 tablespoon hot sauce
1 teaspoon Cajun seasoning
1 teaspoon granulated sugar
1/2 teaspoon black pepper
Pinch of ground cayenne
Parsley leaves, for garnish

Steps:

  • Heat oven to 350 degrees and coat a 9-by-13-inch baking dish with cooking spray.
  • In a large (12-inch) heavy skillet over medium heat, fry the bacon until crisp, about 3 minutes per side. Remove the bacon to paper towels to drain, leaving behind drippings. Crumble the bacon and set aside.
  • In the same skillet, add the chopped onion, celery, bell pepper and 1 teaspoon salt, and sauté until the onion is translucent, about 5 minutes. Add garlic and sauté until fragrant, another 30 seconds.
  • To the skillet, add the rinsed rice. Stir and toast the rice for 30 seconds. Add the crumbled bacon, tomato purée, stock, hot sauce, Cajun seasoning, sugar, pepper and cayenne.
  • Bring the rice and vegetables to a boil, then reduce the heat to low and simmer for about 5 minutes. Taste and add salt, if needed.
  • Carefully transfer ingredients to the greased baking dish. Cover the baking dish tightly with foil, and bake until the rice is tender, about 40 to 50 minutes. Check the rice after about 30 minutes to make sure all the liquid is absorbed, and the rice is tender. (If it's too dry or not cooked all the way through, add a few tablespoons of water or stock at a time, if necessary, and cook a little longer.) Fluff with a fork before serving and garnish with parsley leaves.

7 -8 skinless chicken leg quarters
1 tablespoon sweet paprika
1 tablespoon minced garlic clove
1 (1 1/4 ounce) bag Lipton Recipe Secrets onion soup mix
1 teaspoon salt (or according to your taste)
1/4 cup sugar (or according to your taste)
2 -3 cups chicken broth
12 ounces diced tomatoes
2 cups jasmine rice
2 -3 cups chicken broth

Steps:

  • Place leg quarters in large cooking pot.
  • Add all the dry ingredients except rice and rub into the chicken until all leg quarters are coated.
  • Turn on the stove to medium heat and once you hear the first crackling add the wet ingredients. Reserve rice and other 2-3 cups of broth for later.
  • Once the liquid boils go to a lower heat for simmering.
  • Cover and let cook for 1-1 1/2 hours stirring every 15-20 minutes so that all the chicken is exposed to the liquid.
  • Once the chicken is cooked remove from pot and measure the amount of liquid you have left in a glass measuring cup.
  • Add 2-3 cups of broth to the left over liquid to measure 4 cups liquid.
  • Put liquid back in pot and once starts boiling add the rice. You may need to add some salt to the liquid if you like your rice a bit saltier.
  • Lower stove to simmer and simmer the rice for 15-20 minutes or until the rice is cooked.
  • Place chicken back in the pot and once the chicken is warm serve with rice.

2 tbsp olive oil
2 skinless boneless chicken breast fillets or 4 boneless thighs, cut into strips
1 red onion , cut into 8 wedges
2 orange peppers , halved, deseeded and sliced thickly
1 garlic clove , crushed
100g long grain rice
400g can chopped tomatoes
300ml chicken stock
4 tbsp ready-made pesto (you'll find long-life jars on the shelves with pasta sauces or more expensive fresh pots in the chiller cabinet)

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil in a large, shallow ovenproof pan, add the chicken and cook for 3-4 mins until golden all over. Remove from pan and set aside.
  • Add the onion and peppers, and cook for 3 mins or until lightly golden. Tip in the garlic and fry for a min. Stir in the rice, then the tomatoes, stock and reserved chicken. Turn up the heat and bring to the boil before transferring to the oven to cook, uncovered, for 20 mins. Season to taste and drizzle over the pesto before serving.

9 -12 boneless skinless chicken tenders or 3 -4 boneless skinless chicken breasts, cubed
1 1/2 cups long grain rice
2 (14 ounce) cans stewed tomatoes (juice reserved) or 2 (14 ounce) cans diced tomatoes (juice reserved)
1 medium onion, diced
3 tablespoons minced garlic
1 tablespoon curry powder
2 tablespoons olive oil
2 tablespoons butter
2 1/3 cups water (approx)
1/4 cup water

Steps:

  • Open the tomatoes and strain the juice into a measuring cup. I usually get one cup of juice from two cans.
  • In a 3-qt sauce pan partially melt the butter and add the rice. Mix the rice with the butter and saute 3-4 minutes on medium heat, stirring every 45 seconds or so.
  • Add the reserved juice from the tomatoes and enough water to equal a total of 3 1/3 cups of liquid (the amount of water is from an Uncle Ben's package, so please check the cooking directions on your rice and adjust accordingly).
  • Using medium-high heat add the oil and onions to your favorite skillet, cooking until translucent.
  • Add the garlic, tomatoes, and chicken. Sprinkle on the curry powder and add 1/4-1/2 cup of water to the skillet. Cover and cook on medium-low heat for approx 8-10 minutes, stirring frequently to coat the chicken with the liquid.
  • Remove the lid from the chicken and allow sauce to reduce as it simmers.
  • When rice has about 3-4 minutes of cook time left add it to the skillet and stir all ingredients together. I like to add a little more curry powder and red pepper flakes at this stage also.
  • When the rice is at your desired texture the dish is ready to serve.
