Zucchini Tortillas image

Vegetable flatbread made with zucchini.

4 cups shredded zucchini
1 large egg, beaten
¼ cup bread crumbs
⅛ cup grated Parmesan cheese
½ teaspoon ground black pepper
¼ teaspoon salt
¼ teaspoon garlic powder

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line 2 baking sheets with parchment paper.
  • Squeeze moisture out of the zucchini. Place in a bowl; add egg, bread crumbs, Parmesan cheese, pepper, salt, and garlic powder. Mix well.
  • Place four 1/4-cup scoops of mixture onto each baking sheet and press into 5-inch circles.
  • Bake in the preheated oven until lightly browned, 22 to 25 minutes.
