Taffy Apple Salad II image

A variation of a wonderful salad.

4 c diced apples
1 can(s) (8 oz) crushed pineapple
pineapple juice from can
1 egg, beaten
1 Tbsp all purpose flour
2 Tbsp cider vinegar
1/4 c sugar
3/4 c chopped, salted peanuts
1 pkg (8 oz

Steps:

  • 1. Drain pineapple, save juice.
  • 2. Mix apples and pineapple.
  • 3. In saucepan, mix egg, flour, vinegar, pineapple juice and sugar. Cook until thick. Let cool
  • 4. Pour egg mixture over apple mixture. Stir until evenly coated.
  • 5. Add Cool Whip. Add peanuts.
  • 6. Sprinkle more chopped peanuts over the top before serving, if desired.
