BANANA MOLASSES MUFFINS image

Yield 12 Muffins

Number Of Ingredients 13

Wet Ingredients
2 eggs, beaten
1/4 cup molasses
1/2 cup brown sugar
1 Teaspoon vanilla extract
1/2 teaspoon salt
1/2 cup oil
2 bananas, mashed
Dry Ingredients
1/2 cup rolled oats
1 1/2 cups all purpose flour
1 teaspoon baking soda
Chocolate chips or nuts, to taste (optional)

Steps:

  • Mix wet ingredients in a small bowl. Mix dry ingredients in a larger bowl. Combine wet and dry ingredients. Stir in chocolate chips or nuts, if using. Spoon into lined muffin cups. Bake at 350F for about 25 minutes, or until a tester comes out clean.
