SPICED ZUCCHINI BREAD
My mother made this many summers while I was growing up. She would make large batches of them and freeze them. I have eaten other people's zucchini bread over the years, but none were as moist or yummy as mom's. I dug this recipe out after a recent group discussion and thought I would also post it here. Steps:
- 1. Cream butter and sugar together. Beat in eggs. Combine dry ingredients in a seperate bowl. Stir half of the dry ingredients into the creamed mixture. Stir in the zucchini. Add the remaining dry ingredients. Add nuts and vanilla. Mix well. Pour into a greased loaf pan (9x5x3). Bake at 350 degrees for 50-60 min. Makes one loaf.
