Steps:
- In the microwave, melt butter. When melted, stir in honey and set aside. Thoroughly mix together brown sugar, flour and shredded coconut. Then add oatmeal. Stir baking soda into butter mixture, mix well and then add to dry ingredients. Mix well until mixture crumbly. Spray a baking sheet (one with sides about 16 x 11) with cooking spray. Press the mixture into the baking sheet. Bake for 20 minutes at 320 degrees. Remove from oven and gently "cut" the crunchies into squares. Return the pan to oven for a further 15 minutes. Remove from oven and allow to cool completely before breaking apart crunchies.
