Slow-Cooker Cowboy Stew (Cooking for 2) image

When there's just two cowboys, here's just what you want to rope in for a meal.

6 ounces beef stew meat
1 potato, unpeeled, cut into 1-inch pieces
1/4 cup chopped onion
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (16 ounces) baked beans in barbecue sauce

Steps:

  • In 2 1/2- to 3 1/2-quart slow cooker, mix beef, potato, onion, salt and pepper. Spread beans over beef mixture.
  • Cover and cook on low heat setting 8 to 10 hours or until beef is tender.

Not bad! I made a few changes to the recipe, but overall it was a good stew. I used a can of diced tomatoes instead of fresh tomatoes, and I added some chopped carrots and celery. I also used a packet of dry onion soup mix instead of diced onion. It
